Banana bread NO milk

Hello

Very remote and rural here and snowed in for the foreseeable. Down to last pint of milk and am cooking for lots of people. I have six large black bananas which could maybe make something for snacks.

Does anyone have a recipe for banana bread with no milk. Or muffins or something like that? Got ten adults on farm so trying to make everything go as far as it can. Many thanks in advance.

Thank you soup dragon which is also ironic as that's what we call MIL, she even has an apron saying that. This is caused by her pan of soup which we think she just adds to daily....

Nigella’s one above is fab, I use Jack Daniel’s to soak the fruit!

I love this one from Marie Laforêt's Vegan Bible except I use less sugar (she specifies 200g).

2 ripe bananas
80ml oil
200g flour
100g sugar
2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
Optional: spices, chocolate chips...

Mash the bananas, combine with the other ingredients, pour into a greased cake tin and bake at 180c for about 45 min.

It's delicious.

this one says use a tbsp of milk, but I never do and it works fine. Is quick and easy, and freezes well too.

There is a really easy recipe on the MN recipe section.

Off the top of my head it is
Bananas how ever many you have
2 eggs
4 butter
6 sugar
8 sr flour

Can also a choc chips

Can do method if you need

Thank you all so much. Things going to start getting desperate soon but managing for now.

Soon I will be posting about quiche with no eggs, chicken with no chicken and booze with no alcohol.....Wink
