I cup SR flour (or plain flour for crepes),1 cup plant milk, 2 tbspns veg oil and a teaspoon of something sweet (agave syrup is good or just sugar if that is all you have). Mix well but gently and leave for 10mins or so to set. If you want crepes then thin out this mix with more milk.
Sorry I don't have a recipe, but look up aquafaba. There is a facebook page dedicated to this egg substitute (canned chickpea / bean drainings ). I have seen pancake recipes posted using aquafaba on there.
