What can I do with 19 tins of corn?

Cleared out the pantry the other day and we have 19 tins of corn!

All well within date but would like some interesting ideas for getting through them - corn bread or muffins perhaps?

Portable breakfasts and lunches for DP would be top of my list - I am not eating corn atm due to low carbing and I cannot work out how we have ended up with so much!

They sound good, I was wondering if a corn and mackerel chowder thing would work? DP eats most things and we have that in the freezer.

I should have said I started with 26 cans of corn so I have worked through a few of them over the last few weeks, aiming for 2-3 tins a week!

I have a nice mexican corn dip recipe if anyone else is interested. Also no DC so just DP trucking his way through all the corn in the world!

I would be scared to see that much tinned corn in one kitchen. Maybe you could make a life-size model of the Jolly Green Giant?

Sorry, not much help but I can't stomach the stuff as it was a staple of every student meal I ate, my time tinned corn time is done

It is dip made of corn rather than for corn but if you wanted to dip corn in corn then it might be for you

1 small tin of corn
10 slices of pickled jalapenos
5 cherry tomatoes
1 tbsp hot sauce - I use cholua
zest and juice of a lime
1/4 tsp garlic granules
1 tsp olive oil
Salt & pepper

Blend to the consistency you like for dips - I just used the nutribullet

We have had succotash before in the summer, I suppose I could make it up and stick it in the sistema for DP to take as lunch.

It is a good job he likes corn!

I can't make those sweetcorn fritters they are so nice they would never make it out of the kitchen!

Fried bananas and chicken?!

DP loves fried chicken, not sure how well they go with bananas Confused

Tuna pasta bake is a too carby for me atm but can be cooked sliced and taken to work by DP!

I made a corn bread type thing with two tins on Saturday morning, DP has Mackerel and corn chowder today for lunch (1/2 tin),tonight the other 1/2 is going into the salsa that we are having with dinner and I am blending another tin to go into the savory pancake mix tomorrow.
15 tins to go.... still managing to avoid the fritters... for now

I sometimes use corn as an easy carb (normally with peas) if I want something really quick. Probably good if you are low carbing as you could make the same low carb meal for everyone and just add some corn for the others.

Corn chowder. Fry off pancetta or bacon, onion, cubed potato, corn, stock, finish with a bit of cream, chopped parsley.
Also do a version with chorizo and leek instead of pancetta and onion for a change.
Indonesian/Thai corn fritters with chilli jam.
There's a spiced pepper and feta cornbread in Anjum Anand's Quick & Easy Indian that sounds delicious and could easily have corn added.

Spicy sweetcorn and jalepeno soup is a favourite of mine. The 80g measures come from a five a day challenge I did! You can make it with stuff that’s hanging around in the fridge and the cupboard.

80g onion, diced
80g carrot, diced
80g pepper, diced
80g sweetcorn
80g tinned tomatoes
1tsp each smoked paprika and cumin
5 slices jalepeno pepper
Chilli flakes
Vegetable stock

Fry the onion, pepper and carrot until softened. Add the cumin and paprika for a minute. Add everything else and cook for about 20 minutes. Blend but not all the way so you’ve got chunky bits.

And this looks very "American" but sounds kind of interesting to try.

I blend sweet corn with a little milk or butter. It's gorgeous with sweet potato, and chicken or pulled pork.
