Want to use up a big bag of spring greens tomorrow, preferably in a veggie meal, but am right out of inspiration. All I can think of is a stir fry, but I'm a bit bored of them. Any more interesting suggestions?

How about doing green shakshuka? In this recipe you could just swap the cavolo nero and spinach for your greens

Colcannon, with a chilli garlic olive oil and parmesan dressing. Steamed as a side for a creamy curry.

I was going to suggest colcannon, with a poached egg on top!

or Nigel Slater has some recipes here www.theguardian.com/lifeandstyle/2008/mar/30/foodanddrink.shopping
