Homemade rice pudding

Hello, I plan on making rice pudding this evening...what's your best method please? I love nutmeg so plan to put plenty in!

I've bought some pudding rice to make some today.

Was thinking 850mls of milk with some water and 175g of rice, then add some flavourings after about 20 mins.

butter is what you want!!

Slather the inside of the bowl with it, add rice and sugar then milk...ideally gold top, but Blue will do.
Plenty of nutmeg too!

If you want something different you can use evap milk....i seem to remember it's a can of that plus a can of water/milk, 2oz rice and a couple of tbs sugar

Or coconut milk, that works too

I might put some in the slow cooker, I love rice pudding.

Oooh great Tips, thanks all...coconut milk sounds very interesting! And good advice to slather the dish in butter and use full fat milk too. SO looking forward to it!

Felicity Cloake gives a very decent overview of the different rice pudding recipes out there (Delia's, Marcus Wareing's, Angela Hartnett's, some others) which she experiments with to come to her ideal recipe.

I think her own recipe is one of the best I've made. It's here.

I use a tin of evaporated milk and then top up with full cream milk.

I like to add ground cardamom and rosewater for a Middle Eastern take on rice pudding!

Don't have an actual recipe to hand but cook it in a pressure cooker so instead of it being an occasional treat we have it as and when the mood takes.Smile

I just follow the milk to rice ratio on the pack, no sugar, cook for 45 minutes stirring regularly, done. Serve with a teaspoon of good quality raosberry jam and a tiny bit of fresh cream. It's far too sweet if sugar is cooked into it imo.
