7yo wants to become vegetarian. Problem is she doesn't really like much in the way of vegetables, and I'm not happy for her to exist on cheese pizza and quorn fillets.

We have had a few chats about this, and I have proposed a compromise. We are going meat-free 3 days/week, with a promise to do more IF she will start to eat some healthy-ish plant based stuff.

Stuff she likes: eggs, cheese, pasta, most green veg, carrots, salad and pulses of all kinds.
Definite no-nos are mushrooms, pumpkins/squash, parsnips, swede and the like; risotto and other "wet rice" dishes. And probably lots more that I've forgotten. Any ideas will be gratefully received!

Falafel in pita
Jack Monroe does a great carrot and kidney bean burger
Fritata with Ann of the veg she does like
Does she eat nuts? Stir fry the veg she will eat with cashews for protein.
Shepherdess pie, Shepard’s pie just sub meat for lentils.

Loads of different flavoured home made humous - garlic and lemon; zatar; smoky paprika and lime etc, served with pita and salads

Quorn mince and kidney bean chilli

Frittata: fried cubes of potato with onion, red pepper, peas and sweetcorn, put omlette mix of beaten egg and herbs over it, and finish under the grill with some grated cheese on top

halloumi kebabs

creamy pasta (very easy) just stir herby cream cheese and steamed peas into pasta and serve with broccoli

Bean chilli, which can then be served with rice, in burritos, on nachos etc.

I quite often chuck a load of beans in a tomato-ey sauce with garlic etc and serve with a jacket potato or mash, or as posh beans on toast. Can add veggie sausages too.

Lasagne with lentils and quorn mince/veg.

Many thanks! Will definitely try. I did a vegetable lasagne yesterday, which everyone was enjoying until I made the mistake of revealing that there were aubergines in it, and then DD2 refused to eat any more Hmm. This is going to be interesting.

Lentil bolognese-just make it as you normally would and substitute mince with lentils. Or how about making a dhal....

pasta bakes with veggies.
pearl barley make a great risotto of sorts but doesn't have to be all wet.
roasted veggie couscous.our preferred giant couscous and once they got into it there are so many dishes you can do with it.
veggie stir fry with noodles
pesto tortilini
how you did the filling for your lasagme but with crumble topping or dumpling or even pie crust.
our loved veggies pies with deconstructed crust which was cut with shaped cookie cutters.
ive seen some really nice recipes using pearl barley,bulgar wheat,millet etc.
veggie fajitas
veggie enchilas
rosti
frittata
carrot and sweet potato frittas
veggie brugers
cheesy leeks on toast
cheesy leeks and potato bake
trays bake roasted veggies of any kind always go down yummy here.added onion and garlic make them taste devine.
