Avocado recipes please?

I’ve had a nice little lie in and come down to my DH putting our shopping delivery away. He asked me what I had planned for all the avocados this week- it seems Ocado accidentally sent us 10 instead of 2! They won’t take them back as they were delivered.

Any recipes that might keep a while? Just me, DH and DD (3). I’m 8 weeks pregnant and nauseous so was planning on marking up some on the toast I’ve been living on to make it more nutritious but don’t want to gain loads of weight (could do with dropping some!).

My favourite is half an avocado, crack an egg in the hole and micro for a minute or so

Avocados often last a week or so in my fridge.

I can fit 2 on avocado toast.

Guacamole is lovely.

Chopped up in salad.

In a smoothie.

Sandwich filling.

Fuckynell I’m right off eggs at the moment (usually eat a dozen a week!) but I may suggest that to DH or try it on DD!

Love guacamole but worried about the calorie count. Again maybe I’ll push it on DH!

Feed lots to your DD? My 1 year old gets through 2 a week but if I bought enough, she'd get through one a day easily. They're so good for them and full of nutrients and fat for growing bodies. I'm like you and love them but am wary of too much fat so she gets more of them than I do.

No I thought I had but checked the receipt and have only been charged for 2. I did accidentally order a kilo of dill once. Was fun trying to use that up!

I used to make this baked avocado and crab thing... it had egg in it, I can't for the life of me find the recipe.

Salad of avocado, cold potatoes, goat cheese, roast chicken, salad leaves, roast pepper - all of these of whatever you have at home.
Also avocado is amazing with Parma ham or smoked salmon. All these make great lunch box. Don't forget add lemon juice.
Pasta with mashed avocado and grated cheese.
For little one : avocado blended with ripe banana (recipe from Annabel Carmel)

Cooked avocado tastes vile!

It's really good on toast

Salads

Guacamole

Smoothies

I sometimes use it as a butter substitute for many of my sandwiches.

Or as a side to my meals (but that's probably because of where I am from... and having an avocado tree in my back garden growing up)

It's also nice with something sweet, like a tea bread or spiced bun.

I don’t think my morning sickness would tolerate smoked salmon! Goats cheese is off the menu but might make a salad with feta for work lunch tomorrow. Or maybe I’ll just spread some on crackers since I’m having a hard job tolerating anything that’s not toast/plain pasta/noodles!

Avocado freezes well. One ripe, cut up and pop in a freezer bag. You can then add it to smoothies.

Its also awesome blended with raspberries. Tastes like raspberry butter icing. I discovered it when DD was a baby.

Thanks all, 2 used- I had avocado on toast for lunch and dinner, DD had one as a snack! (She’s tiny so delighted to see her have one).

Tonight doing guacamole as a side for the pulled pork that’s in the slow cooker (preparing raw meat in the morning is NOT good for morning sickness by the way!). Tomorrow making chicken fajitas with avocado spread and the following day avocado spaghetti as suggested above.

Fingerling that sounds like something I’ll need to try too! Might try the avocado chocolate mousse too.

I think avocado and pea soup is amazing. I had no idea how smooth and rich it would taste in a soup. Just boil a load of peas in stock, then shove half an avocado in and blend. Really good. (you can fry some onion before adding stock and peas too if you want)
