If you cook a chicken on its use-by date, can you still use the cooked leftovers for the next couple of days?

Yes I do regularly. If I have meat that is going to go off before I can eat it, I will cook it to give me a few extra days

PLEASE forget expiration dates on meat!! They are meaningless. If you’ve kept the groceries in the back of your hot car on the way home, and stopped off for lunch, the chicken MAY start to turn a little sour and green LONG BEFORE any date is reached.

If your refrigerator is kept a little lower than normal, say 37F (3C) the chicken may last far longer than any expiry date shown on the package.

Don’t forget, it is common practice in supermarkets to remove unsold cut-up chicken when the date is reached, and to disguise these using in herbs and rubs, and re-package them as ready-marinated chicken. With yet a further expiry date!

Ignore the expiry dates. Let the meat or poultry tell you if it’s getting a bit old - is it off colour? slimy?, a sour smell? If not- go ahead and use it.

Finally, after a lifetime of investigating food borne illnesses, and researching and teaching about them internationally, I can tell you that there has not been a single case attributed to someone cooking and eating RAW meat that was a little ‘old’! Nothing can happen that could cause illness even if decomposition had started.

yes killing stopping growth of any bacteria means getting it up to a temperature done in cooking.
we always do and haven't given it a second thought.its always been fine.
id only worry if it was starting off as off and smelly a d fear this has already started the bacteria growth horiibleness but this weve found is never there on use by dates anyway.
haha I'm making this sound too complicated even for myself.
