How to keep grated veg

Got some pre-grated veg from Tesco - beetroot and butternut squash. Best before date is Tuesday but I won’t be using it until Friday. I’m going to be making it into a slaw using Greek yogurt and vinegar. How do people think it will keep best? Just as is in the sealed bag (will probably go a dit dry but I’ll be adding the dressing)? Made into the slaw in the fridge (dressing might separate)? In the freezer (will probably go watery when I defrost it)?
Any advice much appreciated.

The vinegar in the slaw should keep it well. So second option.

Slaw made with raw butternut squash sounds...interesting. Have you ever tried raw squash op? It's horrible!

Hmm... mixed responses. I think I will make up the slaw. msHippo, yes I’ve had raw squash - it’s okay in salads if it’s grated/ finely sliced but in a slaw it starts to pickle, so it’s not really raw and much nicer!

I don't think already cut veg with BB of Tuesday is suitable on Friday, it's not going to be great. I'd make other plans. Sorry.

I buy Tesco grated beetroot every Friday, it lasts me at least five days but not sure if that takes it over best by date, but never had a problem with it. On the other hand any time I have bought butternut it never keeps more than a day, it goes very sour. I think I'd pickle it straight away to decrease the chance of it going off.
