Homemade chicken curry

Anyone have a yummy chicken curry recipe not overly spicy but something with a bit of a kick to it? Yet to find one me, DH & toddler like. Thanks

I cheat (a bit).

Onions/ginger/garlic chopped, start frying
Add 2 tbsp water, let evaporate
Add 2 tbsp of pataks tikka masala paste
Stir. Then add chopped up chicken
Fry till chicken turns white
Add tin of chopped tomatoes
Add tin of coconut milk

It is lovely. The cheat part is the pataks paste, but you can make your own paste.

They also do a korma paste which is lovely. Just remove the chopped toms and add some double cream. Better for toddler, less hot.

Meera Sodha's Mum's chicken curry is good from Made in India or any of her other chicken curry recipes to be honest, not had a bad one yet and all cookable after work. They don't take too long at all.

I make my own Malaysian curry paste and leave the bones in to give it extra flavour. Obviously you'do be able to take it off the bone for your little one. The ingredients are:

Turmeric
Ground ginger, coriander and cumin
Star anise
Garlic x 3-4 cloves
Large diced onion
Coconut milk
Whole chicken kept on bone and chopped into sections
Fresh or dried chillies

Method

Mix dry spices together and and add oil to make thick paste.
Add garlic and onion to pan and cook until soft
Add chicken pieces to pan with heated oil
Add paste and cook for 2 minutes
Pour half of the coconut milk in and add star anise
After a few minutes add a little water and the rest of the coconut milk
Cover and leave to simmer for 30 minutes
stirring occasionally
Taste and add salt if needed. Then cover and leave to simmer for another 30 minutes. Taste as you go. Once cooked, uncover and cook for a further 15-20 minutes
Serve with rice and halved boiled eggs
Chillies can be left out initially and added once you've taken some out for your youngster.

Forgot to mention that you can also add boiled, diced potatoes to bulk it out.

I make a school dinner type curry that always gets praised. Fry an onion for 10/15 minutes, add lots of garlic and ginger and a couple of tablespoons Tesco curry powder. Add tin of tomatoes, chicken oxo a small amount of water, a handful of lentils and some chopped raw chicken. Sometimes add some spinach. Season with salt and lemon juice. The seasoning is key I think. Easy to adjust the heat with the curry powder. Also woks well with lamb mince and peas or white fish instead of chicken.

Easy chicken tikka masala:

Marinade chopped chicken in 2tsps of smoked paprika and juice from half a lemon

Chuck 1 onion, 2 garlic cloves, 1 tbsp tomato purée, a thumb sized piece of ginger, 1 tbsp water and fresh chilli to taste (I use half a chilli) in a blender and blend to a smooth paste.

Heat the curry paste on a high heat for 5-10 mins.

Add the chicken. Add 1tsp turmeric and 2tsps garam masala. Cook for 1-2 minutes.

Stir in half a tin of coconut milk (or more for a milder flavour) Simmer until chicken is cooked and sauce has thickened.

Stir in a handful of ground almonds and some fresh coriander (optional)

Enjoy Smile

Dry fry a handful of coriander seeds, cumin.

Grind in pestle and mortar

Fry in oil for 2 mins

Cook 2-3 finely chopped onions in ghee or butter/oil mix very slowly for 20 mins minimum

Add a few crushed garlic cloves, teaspoon of ground turmeric, teasooon of Kashmiri chilli powder cook for 2 mins

Brown chicken in pan

Add chopped fresh tomatoes, tin of coconut milk

Cook until chicken done (15 mins or so if off the bone and cut into chunks)

Finish with fresh coriander
