Veggie frittata. Jacket spuds and beans (start off for 6 mins in microwave to get them going). Vegetable soup and crust bread.

Soup? What vegetables have you got in? Throw what you have in a pot, a couple of potatoes too and season well, blend. Done.

I don't have a lot, I have wraps and cheese and tomato so could do wraps actually. I could go to shop, can I do a fritata with a wrap?? Confused

Yeah I could do a soup but only have a food processor and not blender. Would that work?

Chickpea pasta if you have a tin of chickpeas, an onion, a veg stock cube and some pasta.

Gently fry onions for a bit, drain chick peas, chuck in pot, 1 pint or so of stock, blend down so you have about half the amount of whole chick peas left, chuck in pasta, cook.

Oh, and if you only have a food processor just take out half the chick peas with a slotted spoon and chuck the rest in the processor. Add a teaspoon of mixed herbs if you want.

What would you have done if s/he were an omnivore? Just adapt and take out the meat?

Just do a chunky soup loads nicer that way i think and serve with cheese and tomato sandwiches.

Frittata in a wrap with home made salsa (tomatoes, diced, with salt, pepper, a pinch of chilli and a slug of oil) some salad on the side if you have any.

quesadillas....basically a cheese toastie using wraps and stuffed with cheese.

tart up with salsa/herbs as required, serve with a bit of salad to make it more lunchy

and also not fancying the chickpea pasta!

You need the herbs which I forgot to mention but put in underneath but it's really not revolting - it's the comfort food in our house for the veggies amongst us and is just a quick version of this:

I went for a soup and she loved it! Or loads of veg and some stock in the processor uncooked (I'll probably cook next time) and then boiled gently for about 40 minutes and stirred in cream and paprika with a little salt.
