Does anyone have a decent recipe? I’ve been converting a regular recipe but it’s not turning out properly. Suffering from a soggy bottom...Grin

What oil are you using? You need one with a high smoke point (not olive) and heat the oil to smoking point before adding the batter

We are a dairy free house and I use soya milk. Or sometimes goat.
What are you using?

Hot oil (not olive)
Batter with oatley and eggs (i use the BBC online one) usually perfect!

Using olive oil. Sadly can’t have Soya as I’m allergic to that too so I’ve been using Almond. Think I might need to try the Oatly Smile

Are you using a metal tray? You need a different oil (higher smoke point) and put the batter into a nearly smoking metal tin

Come to think of it, it’s only the last few times I’ve cooked it that it’s not worked out which coincides with DH throwing out my ancient and rather battered metal tin!

Will get a new metal tin, try Oatly and vegetable oil. Do you think that might help? Smile

I use goats milk, and a non-metal casserole type dish.

Put oil and sausages in dish and put in hot oven.

Make batter. Use 4 eggs. Measure 200 ml of milk. Pour in mixing bowl. Then measure '200ml ' of flour. Ie. Flour upto 200ml mark in jug and pour in mixing bowl. Whisk with allow whisk. Apparently, if you let the mixture stand for a while, then it helps. Get dish out of oven and pour batter in.

If you need more batter, use 2 eggs to 100ml milk, and 100ml' flour.

Almond milk in batter, rapeseed oil in tray, decent sausages. Works fine.

And now I know what to make for dinner on Tuesday Grin

I tend to cook separates when using almond milk they just don't fluff up enough in a big dish

I just do a regular recipe with oatly as dd has cmpa. Mine hasn’t gotten much better since I got a proper roasting tin and waited for the oil to be really hot.

You're not a dairy free house if you use goats milk. Same to the other poster, goat IS dairy.

OP, you can use coconut milk, rice, oat. Any of them, though I'd avoid any of the nut "milks" or anything sweetened.
