What can I do with 300ml of double cream?

It's not something we would normally use or have in the house. Leftover from making ganache.

Those of us with a sweet tooth everyone don't tend to like fatty foods, and those of us who like fat need to get back on the LCHF wagon after the excesses of the season.

Once term begins again normal service will be resumed in the kitchen. Shall I do something with the cream today for one last excessive indulgence, or shall I just be sensible and freeze it in cubes to use up in my LCHF recipes later on?

For full disclosure: today's already marked for continued indulgence - a big roast dinner and a huge trifle.

If you whip it lightly it will freeze (if you can’t find anything else to do with it right now).

Celeriac dauphinoise if you want to get back towards lchf? Or heat up the cream with cheese and make cauliflower cheese with the roast (mandatory really, and lchf friendly again).

Make more ganache, about 500 grams of dark chocolate should do it for truffle making!
All melted together (add a good glug of Bailey's too), chilled for 3 hours, out of fridge for 10 mins, ball it using a melon baller and hot water (the same way you'd ball ice cream). Chill balls for 10 mins and then coat in melted milk chocolate. Decorate if desired and chill until set.

Second the dauphenois. grind some pepper into it ad a couple of squished cloves of garlic. big pinch of salt. Chuck in your finely sliced potatoes (also works well with celariac) pour it all into a roasting tin or baking dish and wack in the oven for 40 min at 170. add goats cheese or cheddar to the top for the last 10 mins for extra luxury. XX

Put it in a jam jar and shake it until it becomes butter. Have it with freshly made bread.

Or use it for fruit mousse. Juice the fruit (any red fruit is best) add gelatine and wait for it to set somewhat. mix it into the whipped cream, sweeten to taste.

And the reason we're not using it for the trifle is that some of the heathens I call my family do not like whipped cream on their trifle. Hmm

(Nothing to do with the fact that I had an attack of the lazies and bought a can of squirty cream the size of my leg from Costco Grin.)

Make icecream! Make a custard, add fruit purée or chocolate, fold in lightly whipped cream, freeze (stir every few hours). It will be gorgeous and keep for 5 or 6 months easily.

Nigella's easy ice cream is basically sweetened, whipped double cream, flavoured (Baileys is good) and frozen. Works very well and keeps for ages.

A good LCHF dessert is cheesecake mix with cream, philly cream cheese, sweetener to taste, a splash of lemon juice and vanilla whipped together until stiff. Keeps well for 4-5 days in the fridge, if it lasts that long!

Definitely truffles! Felicity cloake's always work a treat for me. I LCHF'd them by using 90%chocolate and reduced the sugar to virtually nothing. I also poured the truffle mix into a square pan and loaded it with roasted pecans/hazelnuts/sesame seeds. They were divine. And then you have a lchf(ish) treat to look forward to in months to come! X

Whip it up into ice cream consistency, add whatever you fancy. Freeze. Voila, ice cream.
