Roasted cheshnuts - what am I doing wrong?

Roasted in the oven with a cross for 20 mins. Like every recipe I've seen online.
They taste rank - bitter with a claggy consistency.
I've only ever had roasted cheshnuts from the street vendor in New York where they tasted and smelled divine.
What am I doing wrong? Over cooked / under cooked / crap cheshnuts???

I only ever use the oven setting on combined microwave, use 230 degree setting for 25 minutes, slit the chestnuts and they come out gorgeous.

I've only ever done them in a chestnut roasting pan on the hob, or on a coal fire. But buying fresh chestnuts is hit and miss - sometimes they are awful.
