I need some inspiration on what to take with us, something quick & easy to make would be good 8 adults & 6 kids so maybe even 2 puds?

A bunch of bananas a load of flakes and some foil.

Cut the nana (with the skin still on) lenght ways to make a slit in it. Stuff the whole flake in the slit. Close the nana up again and wrap it in foil. Bang it on the barbie for about 5 mins. Unwrap and eat. It's heavenly!

I second the bananas and choc.

Or you could do an eton mess. Whipping cream, strawberries, raspberries and merangues.
Break up the merangues and throw it all in together.
Really quick and yummy.

I always do "chocolate scrapey" from my childhood -

red grapes chopped in half layered up with equal quantities cream and yoghurt whipped together and then grated dark choc mixed with muscavado sugar like this. Yum Yum Yum.

grapes
yog and cream
choc and sugar
grapes
yog and cream
choc and sugar
and so on till the bowl is full!!!

v easy, don't need to be exact about measurements and the bowl is always always licked clean!!

I had thought of making Summer pudding, never made it before, just one problem though, I dont have raspberies & redcurrants & only live in a village with a local shop that only stocks basic fruit & veg, don't really fancy a trip to Tesco tonight

A whole pinapple, maple syrup, a sharp knife and some foil.

Unbe;ievaby good. Tastes about a million times better than pinapple not cooked on a bbq.

tropical tiramisu/trifle

layer of sponge cakes soaked in pineapple juice
layer of diced fruit - I use mango, banana and pineapple but whatever you like
layer of cream mix (tub of mascapone, plus lightly whipped double cream plus "proper" custard if you like)

depending on size of bowl, you can repeat the 3 layers again

Decorate with tiny bits of fruit or grated choccie.

V yummy and child friendly.

Some "cool summer puddings" from Nigel

I'm trying to find a recipe for a raspberry refrigerator cheesecake that I used to make for barbecues, many years ago when I could be arsed. Still looking...
