Portion sizes for "ploughmans" supper? Anyone help?

Hi

Wondered if anyone can help me here? PTA is doing a quiz night and we are providing a "ploughmans" supper of cheese (cheddar/soft cheese), pate, french bread, pickles and salad during the evening. Also crips and nuts on the tables in bowls. I'm trying to find what an acceptable portion size would be, somewhere on the internet. We need to purchase the food next Friday and I'm also costing out the items so we ensure we make some profit in this too!

Any guidance, information would be gratefully received.

I would reckon that you would need

2 - 4 slices french bread cut on an angle
200 - 250g hard cheese (but at least 2 different varieties)
small dollop of pickles
and fill the rest with salad

I would avoid pate like the plague unless you can be sure that it is all refrigerated until serving and as you're plating up it'll be difficult

actually I think it best if you have a counter where there's someone serving with a cheese board and bread so people come up and help themselves to what they want with server cutting and giving them the cheese .. that way there'll be an embarrassment factor about how much they take

do a deal with supermarket where you can take back unused cheese (ie not opened packet) and have loads of bread (as its cheap) and salad and big bowl pickle

or even just lay out a cheese board and keep replenishing

if it was me I'd have

a cheese board with cheddar, brie and a blue cheese like stilton

green grapes

branston pickle

salads - green and couscous? (can't people provide these)

french bread

Thanks for that - I'll have a think! I've been to Costco this morning and got loads of prices of cheese and stuff. Now need to work out price per head!

Phew - I thought this would be straightforward too!
