Dinner to impress the inlaws??

My partner and I only knew each other a year or so before we found a happy surprise to be on the way (due April 15th) soon. I never got to know his parents beforehand and while he reassures me that they love me, I do want to impress them as I don't want them to always think of me as some bimbo their son accidentally knocked up (although it does admittedly take two to tango). They're impressed with me being at uni, etc. but there's still some old fashioned domesticated part of me that wants to show them I can be a good housewife too (bizarre and antiquated, I know). Maybe it's just the pregnancy brain but I'm desperate for a recipe that can impress but at the same time isn't too complicated - they don't really like soup or seafood/fish unfortunately which are my specialties. They're coming over on Sunday so I've got to have my life in order by then. I also don't want it to look like I tried too hard either. Scottish or Australian dishes would also be great as those are my dual nationalities.

The best thing you can do is be yourself and give yourself time to get to know them. I make this often, the best thing you can do is be relaxed and this takes the pressure off:

  • preheat oven to 200 (180 fan)
  • Get a large roasting dish and add to it 2 sliced onions, 1/2 a chorizo ring sliced, 3 sliced peppers, and about 1kg of potatoes in rough cubes. Add 8 skinless boneless chicken thighs and drizzle with oil and sprinkle with mixed herbs (you could even do this in advance)
  • Give it a bit of a mix with your hands to coat everything
  • Roast for 30-40 mins until the potatoes are cooked
  • Serve with green beans


Then as it's in the oven all you have to do is cook some beans at the end and have all that time to get to know them, make a drink for everyone. Put some fancy olives and crisps out.
