Corned beef

Opened a tin of (light) corned beef with fond childhood memories. One slice later and I've remembered childhood was at least 35 years ago and sometimes things change 😣. What shall I do with the rest of the corned beef?

make corned-beef hash, it taste completely different when cooked.

labskaus
mashed potatos, mix with the corned beef and serve with fried egg and pickled veg (beetroot, gerkins)

I make my corned beef hash completely differently so I'll post it!

Fry off a chopped onion until soft. Add chunks of chopped potato, hot water to just cover, chopped chunks of carrot, oxo cubes, Lea and perrins. Simmer until potatoes are soft, then add chunks of corned beef. Add more lea and Perrins and pepper if you need it. Good with pickled red cabbage and crusty buttered bread

The corned beef hash debate is always interesting on mn. There are many ways and all of them right.

As well as hash- I love corned beef stew, pasties, and pie 🥧

Live action feed ....

2 Small to moderate (but going off soon so one third is discarded) onions have been softened and browned too much on one side where I got distracted by homework

The solitary but large potato has been chopped finely and added to the pot with some water. Lid is on to keep the heat in until potatoes are cooked. One carrot is in the pot, chopped as finely as I could be bothered.

Wine is slowly going into the cook.

As defence against the precook the potatoes debate, I am lazy and also using the excuse that we've just moved in and I haven't found all the pots yet though I can think of one but I'd have to wash it just to use it. Plus my kids are more likely to protest if they can see different pieces, whereas if it's cooked together they tend not to complain so much.

It's in, and it has turned to mush around the veggie chunks. But it smells good.

I have no Worcestershire sauce so am rashly adding posh aged balsamic. Don't shoot me, I'm not in the uk and I'm only just setting up house.

Can I ask how you get crispy corned beef without it falling to pieces and/or going mushy?

I am perennially disappointed with mine!

I always do but only because my mum did and so did my nan Grin

I think if you want it crispy it's best to chill it first so it holds its shape a bit more
