Damsons, GF what can I make?

I've run out of room in my freezer so the damsonscwill have to be defrosted. No idea what to use them for. I'm Gluten Free and could do with something not too naughty as I'm doing slimming world (although if you have some lovely suggestions the SW is less important 😜).

I love Damson jam. I'm currently enjoying some damson gin I got bought as a present - it's not homemade, but I bet you could find a recipe.

Crumble with half gf flour and half ground almonds. Served with custard.

Damson Gin, far superior to sloe gin in my opinion. I've just started drinking this years, it's lovely.

I've done damson gin before but not with frozen damsons. Could be worth a try thanks Callme. I will also try the crumble for lunch tomorrow, hadn't thought of half n half. Lovely for a snowy day Sunday lunch. Thank you.

Gin/vodka/wine are all lovely along with jam or crumbles.

I wish I had some damsons. This year my usual tree had been stripped bare before they were even ripe. I cant imagine how bitter their jam/wine will be from those.
