Xmas cabbage

My guests love cabbage but I've never cooked it before other than steam it. Can someone give me a decent braised cabbage recipe but without all the star anise and ground cloves added to it.

Very approximately: thinly slice two onions, slowly cook with a generous amount of butter. Add your sliced cabbage, couple of chopped apples, a dessertspoon each of soft brown sugar and wine/cider vinegar, a small amount of water. Cook low and slow with a tight cover for an hour minimum, on hob or in oven, whichever you prefer. Stir once or twice, add a bit more water if necessary. Always betterthe next day, freezes brilliantly.

I use Delia's recipe from her website. Very easy, you just layer everything in a casserole and bung it in the oven. Freezes well if you want to make it in advance. I've also cooked it in an electric pressure cooker. It only takes five minutes at pressure.

I use Delia's recipe too.....I think, if it is the one with the apple in it? I usually halve the amount of sugar though and hold back on the spices by a little. They are very subtle though.

Red cabbage would be different to white.
Red needs a longer braise, apples, star anise, cider.
White (savoy is best) needs finely slicing, sautéing with bacon day before. Then reheating briefly in microwave.

braised red cabbage is the best, and I'll vouch for it being fabulous from the freezer too. That recipe from milkmoustache is pretty much what I do.

I might make some actually in readiness. We have a goose stuffed crown effort organised for Christmas Day, so it'll be fab with that.

If you aren't keen on the star anise and such, then just leave it out...maybe a little orange zest and some herb (that complements your other veg choices) instead, you can get a very puddingy vibe from a lot of the traditional christmas spice range.
