Fresh ideas for veggie lunches & teas please

DD is returning this weekend for a month and has announced she's gone vegetarian. We eat a lot of veggie and fish dishes, but she doesn't like things like baked beans, anything too cheesy, hummus, soups and hates ready meals. I do have a few pasta veggie meals I know she'll eat and a veggie curry with chickpease, but she can't live on those, so looking for inspiration please.

Also, what protein can I give her for lunch or add to things like stir frys? What would be easy to give her xmas day?

veggie chilli with beans and peppers serve with rice one day and make into quaesidilla the next.
Fritata, chuck in halved baby potatoes and veg, nice warm but also good cold the next day for lunch.
Add cashews to stir fry
Veggie sausage casserole
Falafel in pittas
Dhal and rice
Chickpea and apricot tagine with cous cous
Jack Monroe has a great recipe for carrot and kidney bean burgers.
Veggie shepherds pie (sub meat for lentils or quorn).
For lunch baked potato with coleslaw
Bagels with avocado and cream cheese
Egg sandwiches

To add protein to stir frys you can use tofu. I usually use toasted, lightly crushed nuts and my kids like "egg roll" added to rice dished or noodles at the end. Make a very thin omelette - roll up and shred into thin slices (surprisingly nice with a bit of soy).

Quinoa (on its own or mixed with another grain like couscous or bulghar) as the carb is a decent source of protein for veggie tagines, power bowls etc.

At Christmas the veggies usually have a nut roast or a spinach and mushroom ricotta or feta pie decorated with star pastry cut outs. My lot love stuffing so sometimes we have that instead but made with chestnuts and mushrooms and herby sourdough bread and lots of nice veg, roasties and gravy.

The Jamie Oiver site has a vegetarian recipe section with lots of good ideas. Hello Fresh (who sell food boxes) have their recipes in an archive and there is a vegetarian section. The recipes are all very easy, quick and have only a short list of ingredients (you don't need to buy their boxes).

For lunches we often have vegetable fajitas or enchiladas with guacamole/avocado crush to make a change from stir frys and rice dishes. Falafels in a pitta with nice salad is also good. We do a mix of veggie curries - say aubergine and tomato curry with a sag aloo, a bit of rice, raita and naan and a salad/pickles for a meal - sometimes a big bowl of one thing gets a bit samey. The Meera Sodha site has some good veggie recipes.

dolmio, tinned tomatos.stew down with a base of peppers.onions.garlic.carrots.sweetcorn,mushrooms,courgettes,cherry toms.chickpeas.sweet or norm potatos.basically any veg mixture. then top with a jus roll ready rolled pastry pack.yum city.or top with sliced potatos..or top with mash.or top with sliced baguette garlic bread for a twist.
this can also be served with jackets.
lasagne but make the sauce more white than cheese
savoury crumbles are devine.
sweet potato curry.
veg pila
jambalaya
paella
stuffed peppers.
hedgehog potatos
stuffed jackets
you can get some great stir fry mixes now in supermarket.
puff pastry sheet tray bakes

Lots of good ideas already.

Veggie pasties - roast a load of root vege in small pieces with some rosemary/thyme then shove into bought shortcrust pastry. Nice with Sunday roast type meal.

Tacos - fry up onions, peppers, mushrooms with some spices and add kidney or black beans and sweetcorn. Or roast some butternut squash or sweet potatoes and mix with fried up onions, peppers, spices. The latter is nice with some chickpeas and spinach stirred in and then used to stuff tortillas enchilada style.

Roast tofu for stir fries or Thai curries. Press it. Slice it. Dip slices in oil/soy/spice mix and roast. Or use a handful of cashew nuts or an omelette cut into ribbons.
