Ideas for beef roasting joint

Hi everyone, I'm not an avid beef cooker and have bought a beef roasting joint that was on offer at the local supermarket. I realise it's called a roasting joint so would be best suited being roasted but I'm looking for ideas about what you would do if you had this cut of meat to cook.

I did a Morrisons beef roasting joint on Sunday- 2.2kg.

I roasted it medium - at 190 c for 2hours. I put it on a bed of halved onions- which had softened and caramelised by the time it came out and I mashed them into the juices for the gravy.

I had enough leftovers for some beef and horseradish sandwiches and to make this Monday pie www.fabfood4all.co.uk/monday-pie/
