i have just posted a recipe on religion/spiritulity (celebrating passover thread) - you can miss out the matzo meal and used mashed potato and add any cooked veggies you like. My corn fritter recipe is also on there ....

Oooh lovely, I was just thinking I really ought to make my own fishcakes for DS and stop being so lazy. Will have a look too thanks.

they freeze really well too so make double batch.

Have posted this recipe before but can't be bothered to search the archives for it. For 1 small tin of salmon use:

1 large potato - boiled & mashed
1 large carrot - grated
1 egg
salt & pepper

mix above ingredients with the salmon then add enough breadcrumbs (or matzoh meal) so that the mixture is slightly firm but not too dry. Form into patties and bake GM6 for 20 minutes. I usually make double then freeze them after they're cooked.
