Why are my gingerbread men crunchy not chewy?!

I have a bad cold and each crunch is making my head hurt!!

How can I make nice chewy gingerbread men!!?

Stick them in airtight container with apple for a couple of days

Apple thing will help (like lebkuchen!) but in my experience makes then more soft than really chewy.
Agree with pp, problem is overbaking. Next time take them out still a little soft and let them cool on the tray, also recipes with golden syrup and brown sugar are better than honey or white.
We have the opposite issue in my house, DH prefers thin and crunchy! Annual battle 😊
