Stbxh left me with 22 month old DD 9 weeks ago. I’d been a full-time mum but have got myself a new job starting next week which I’m very excited about. It is full-time, but new employer understanding and happy for me to get away at a reasonable time to get DD from nursery. Friends have been marvellous and I’ve lost over a stone, hurrah.
I know it’s going to be tough, and I’m going to be juggling lots of balls in the air. I want to make sure I don’t run myself into the ground not eating properly and I need to keep my energy levels up.
I’m a good planner with a spare freezer in the garage and I eat almost anything. I just need some inspiration please for meals for one because I don’t always want to be sitting down to reheated chilli con carne, if you see what I mean? I love to cook but will need to have something on the plate in around 30 minutes, once I’ve put her down to sleep. Any ideas gratefully received!
