Hi all,
I'm desperate to find some more easy one pot/traybake recipes... any recommendations greatly appreciated!

A little sick of pasta but meat based/rice/veg etc...
Thanks!

I tried Nigellas Chicken thigh and frozen peas tray bake, I was dubious but hey it was in Waitrose magazine. It was delicious, I was really surprised incredibly easy and quick, and a bit different. And very cheap.

Fajitas traybake found it on twisted food.
Chicken, peppers onions on a tray with oil and fajita mix. You'd have to watch the video looks nicer than it sounds.

These are good:
www.jamieoliver.com/recipes/chicken-recipes/indian-spiced-potatoes-with-chicken-thighs/ I can't get fresh curry leaves so I just leave them out - still great

thehappyfoodie.co.uk/recipes/chicken-and-chorizo-bake-peppers-sweet-potatoes-and-spuds

www.jamieoliver.com/recipes/vegetables-recipes/briam/

I roast a pork chop, lamb chops or a piece of chicken with the Briam

I often coat chicken or fish in a spice blend like harissa, chermoula, dukkah, tikka etc and shove it on top of a load of small cubed veg (courgette, pepper, red onion) and sweet potato - only takes about 30 mins in the oven and I might crumble over a bit of feta and some herbs, squeeze of lemon..

Invest (not very expensive, actually) in a slow cooker.

Nigellas Spanish chicken is fab. Chicken legs and thighs, red onion, chorizo, juice and zest of orange, oregano. In for hour turn once. Delish super easy.
