Christmas food to make and freeze now!

I'm planning on homemade mince pies being the first into the freezer. What else can I make now and freeze?

Aiming for a well prepared, tasty, homemade Christmas with limited stress.

Gravy and stuffing balls are make a heads at mine.
You can do the pigs in blankets, the roast potatoes, the bread sauce, the cranberry sauce in advance too.

That's alot isn't it! I'm also wondering about party food or nibbles for when people turn up?

Sausage rolls. Make and freeze. You must defrost them before you cook them though.

I find making the boring meals for 22/23/27/28 December is much more useful than doing the party stuff because there is an incentive to make fun stuff. Normal dinners by 27th are a ball ache.
So I make 3/4 lasagnes in take away containers, chicken curry, pulled pork etc so I can whip out a balanced meal when I am tired —hungover—

Although jamie’s Gravy is well worth doing. Just leave out the star anise - it’s too strong

I also make pastry for mince pies. So much nicer than shop bought (and I am normally fine with shop bought pastry!) the dam leopard cream cheese pastry is out of this world.

Definitely the make ahead gravy by Jamie. I also leave out the star anise.

I also make his red cabbage (with Apple, bacon and fennel seeds) in advance. I just think it tastes better frozen and reheated.

Delias red cabbage is the best...or neven maguires...I make loads and freeze in bags so we can have it after Christmas too.
