Any tried and tested that you would recommend?

As in making your own sausages or dishes with sausage in them?

Ha! Good point. As in recipes containing sausages. I've made Mary Berry's sausage lasagne and that's it aside from sausage, mash and onion gravy. I have a sausage lover coming for dinner.

Sausage pasta or sausage pasta bake.

Sausage tray bake with lots of veg and herbs. And a bit of feta thrown in at the end.

Jool's pregnant sausage pasta.

Sausage stew - with venison sausages.

Frankly though I like them best with mash.

Search the Jamie Oliver website! There’s a great sausage casserole recipe from Jools on there, a sort of smoky bean creation.

Also Jamie’s Toad in the Hole recipe which has a simply but yummy onion gravy with it.

I made a lovely sausage meat and tomato risotto the other day, a dash of fennel goes beautifully.

Sausage ragu

Brown your sausages, and remove from pan.

Fry onion, garlic, courgette, peppers and mushrooms.
Chop sausages into 4, and return to pan with passata/ tinned toms.
As some mixed herbs
Simmer for 15, then put your pasta on.

If I remember I add a son of red Pedro at the end.

One of my kids favourite, and they eat the veg in it.

We do sausaage and bean casserole.
Brown the sausages
Very finely dice a carrot, a red onion, a couple of red or yellow peppers, some garlic and a celery stick and fry until soft. Chop up sausages and add with a glass of red wine, some fresh thyme and rosemary, a tin of finely chopped tomatoes and two tins of your favourite beans (borlotti, kidney etc. baked beans if you like though they tend to be too soft.) Add salt and pepper, a bit of worcestershire sauce or smoky paprika or chilli - whatever you want to give it a kick.

Serve with either mash or red, brown and wild rice and some steamed green veg.

I do a toad in the whole with bells and whistles! First wrap sausages in bacon and brown in the oven with some red onion wedges. Make the batter and add in a good dollop of whole grain mustard. Once brown add both the pigs in blankets and red onion to your batter and bake as usual.

Sausage meatballs, with a spicy tomatoe sauce. Yum

I do sausage meatballs too. Just as an aside, I've discovered some really decent new range of sausages in ASDA (£1.56 for 8 sausages) called Harry and Jim's. They are 70% pork which is pretty good for the pruce I think. The Lincolnshire ones have sage in and they make a lovely toad in the hole or sausage casserole.

Another one for Nigel Slater - he does a sausage, basil and mustard pasta that’s really simple and tasty!

Casserole dish. Bag of frozen butternut squash. Pack of chicken sausages. Sliced red onion. Few teaspoons of harissa paste. Roast for 20 minutes, then empty a kettle of boiling water over half a bag of kale and stir that in too. Roast for another 5 mins until squash is soft and sausages cooked through .

I've got a great recipe for cider sausages at home but I'm currently at work. Google it maybe? Gorgeous with buttery mash.
