I made a butternut squash soup the other day and was like - wow, I can't believe how quick, tasty and easy this is.

Now I want to make more!

Can you give me your favourite soup recipe please?

i roast butternut squash, make that into soup

last night i roasted a pumpkin - the soup made out of it is also delicious, i added a leek, a potato and an onion

Butternut squash and smoked bacon is lush.

I mostly just make up a vat of veg soup with whatever we have in, currently have a roasted butternut squash, roasted pepper, celery and tomato one on the go. It's the only way DS2 will eat any of that veg.

I'm a soup noob, so basically I can just soup up any vegetables I want? Using the same process of softening veg/stock/season/blitz?

I think so, try some websites, i like to add plenty salt and pepper and spices.

My two favourite soups are a simple but delicious one:

Delia’s Leek, Onion and Potato Soup

and a slightly more complicated but equally delicious one

Hugh F-W’s Lentil and Bulgur Wheat Soup

Chicken broth- bones from roasted chicken for stock, boil up, strain, add some barley groats, cubed potatoed, chopped carrot, celeriac, leek.

Lentil soup/ yellow split pea soup on smoked ribs ( I don't do ham shank as too difficult to strip the meat)

Tomato soup- chopped tomatoes, carrot, brown onion, blitz with a spoon of creme fraiche.

Jamie Oliver's butternut squash soup with garlic-tastes absolutely awesome.

Beetroot soup- boil beetroot, take out when soft(ish), grate, add cubed potatoed and boil up, serve with creme fraiche.

Lentil, carrot and smoked bacon.

1kg of carrots
3 medium onion
3 garlic cloves
Pack of red lentils
Pack of cheap smoked cooking bacon (this looks horrid but works a treat)
Stock
Pepper
Single cream (optional)

I literally soften the veg, fry off the bacon, add the lentils, add stock and bring to boil then simmer until 'done'.
Blitz it, taste and season.

The above costs about £3 and can stretch to 8 decent portions and freezes really well.

3 large leeks
2 fennel bulbs
Chop up
Sweat in butter till soft
Cover with a litre of veggie stock
Season with s&p
Blitz till smooth & creamy.
Soooo DELISH! Smile

My Brother made a delicious soup the other day and as is usual when I see him and have soup I had to guess the ingredients! Coriander? no. Lemongrass? No. Ginger? yes. Onion? yes. Carrot? yes. Well how come it is gree?. Eventually he admitted it was marrow. So gorgeous!
