Food challenge for you - save me!

We have guests coming round next Saturday but its a challenging combination:

Guest one - meat eater, would be very upset if it was veggie. Hates mash
Guest two - hates mash. Can only eat soft and non spicy things due to a current medical condition
Guest three - a vegan who hates mushrooms
Guest four, me and DH - will eat anything.

Im thinking two courses. Wouod like it to be autumnal. Any ideas?

Can you do a slow cooked beef stew (so meat very tender) and then maybe a slightly spicey veggie and bean casserole with jacket spuds all round and then people can help themselves according to what they like? Pudding wise have a google for raw chocolate vegan puddings maybe?

Am I missing something? I thought OP said that 2 guests hate mash, so that would mean cottage pie is out, and one guest can't have spice, so wouldn't chilli chicken be a bit of a bad one?
How about risotto? You could do a chicken one and a butternut one. BBC Good Food has a very popular butternut and sage risotto.

What about something like a chickpea and lentil dhal? You can make it very gentle yet tasty in terms of spice, use coconut milk so suitable for the vegan and serve with rice as a full meal for guests 2 and 3 then put out some grilled spiced lamb or chicken so the meat eaters can have that on top

Chicken, chickpea and apricot tagine and and a root vegetable tagine both served with almond and cous cous.
Followed by a blackberry and apple straddle (just roll pastry is vegan) and Swedish Glacé ice cream.

Starter- country veg soup / carrot and coriander soup/ red lentil soup

Main- risotto- squash /pumpkin and sage - poach chicken breast and cube it to include or exclude as per choice.

pie with sliced potatos on top instead ala hot pot look. start with the same pie base.
either a gravy base of celerby carrots,onion garlic. split into two pots.add meat and tomatos and gravy stock to one.
add butter beans other pulses and root vggies to the other,
cook together and top with sliced potato top,or even read to roll pastry top.or even duimpling cobbler topping.
vegetable stew with chickpeas.onions.garlic.chipeas.leeks,tin of tomatos.jar of dolmio pasta sauce,potato,sweet potato even punkin or squash at this time of year.(ither veg you choose) herbs,season. then split off and add meat like pork chops or chicken to one leave other veggie.serve with bread, or rice or pasta
another great topping for bases is slices of garlic bread or bageuette.
id do something you can split into two adding meat to one.

if you do a stew base your meat like pork or chicken can be paoching in stock or milk alongside the other cooking.

How about a sausage casserole? You could do a meaty one and a portion with veggie sausages for the vegan. Serve with roasted squash, a green veg and maybe some cheese to sprinkle over - blue cheese would be nice, but cheddar would work. Plus it's easy to make ahead and reheat so you're not spending all day in the kitchen.

For pudding, I'd go with something like apple pie or crumble, or a fruit cobbler. You could use dairy free margarine (like Pure) to make the topping and then it'd be suitable for everyone, and the vegan guest could have theirs without cream/with Alpro/Oatly cream instead.

I would recommend a green cabbage slaw with cashew sauce, that would satisfy the vegan guest...I found a good recipe here allfitrecipes.com/recipe/dinner-recipes/green-cabbage-slaw-cashew-sauce/

And it could fit well with a one tray asparagus lemon salmon and whoever cannot eat fish would be fine with the vegan side of it Smile

I would do a vegan dish with some roast chicken breast or a chop on the side.
For example : Greek Briam - serve with a pork chop or chicken breast fried/roasted with garlic , lemon and parsley. Good squeeze of lemon juice and maybe a green salad. If the meat rests for 10 minutes or so it should be soft.

or if aubergine is out you could do a courgette tian. Fry garlic, onion courgettes and sliced tomatoes for a few minutes add some thyme or oregano put in oven dish and sprinkle with breadcrumbs or a nut/oat/crumb topping - bake and serve with a meat on the side and salad. To make it more autumnal you could do a root veg "crumble" with meat or baked fish on the side.

Really easy and you can prepare the briam or tian in advance. Then it all can just be slammed in the oven.

Serve with vegan (coconut) yoghurt and cream

A squash soup might be good as a starter

Risotto. Lovely lovely risotto.

A Mediterranean mix for starters - hummous, olives, meats, cheese, marinated veg and nice bread.
Cheese board with honey
Desert- cake , cake, cake
