Soup, glorious soup

It's that time of year that I start making lots of soup. So far made standard lentil and delias leek n potato - both de-lish....


Looking for inspiration for next pot.
Please inspire me otherwise it will be lentil all winter long!

Lentil with tomato is brilliant though!
I love butternut squash, cauliflower, pea, carrot, minestrone, scotch broth, French onion...

Today I made a spiced root vegetable soup. My own recipe of parsnips, carrots, 2 noon, 2 cloves of garlic and a sweet potato or 2 plus ground cumin , turmeric , plenty of black pepper and sea salt. I cook it for around 30 mins when veg is softening and then blitz it with a hand blender. I will make a similar version with my pumpkin flesh when carved.

I love the soup I grew up with - whole chicken boiled and removed, then soup mix (barley, yellow split peas, dried marrowfat peas and red lentils) boiled for 45 mind or so. Then carrots, celery, leeks, potatoes and optional onion for another 45 minutes or so. Chicken scraps added, rest used for another meal. My grandparents made this with a “boiler” chicken which you rarely get now- I think this is a past laying hen. My vegetable avoiding children live this!

I agree that sweet potato in soup is fab, it makes such a velvety texture. I'm interested in the lentil soup. What else goes in? i have a bag of red lentils and green ones too.

I made a winter casserole with hare (roadkill), carrots, potatoes and onions. After eating and freezing two lots, I whizzed up the rest (no hare meat in it but obvs the vegs were all flavoured with it) and called it "winter soup". It was nice! So something similar with beef or whatever?

Cauliflower cheese soup with crispy bacon on top. Add some mustard too, makes it really cheese tasting

The national trust do a wonderful red pepper and tomato soup and I am trying to find a receipe for that, (suggestions welcome!)
Other favourites are Delia's minestrone - but with orzo pasta instead of rice and added sun dried tomatos.
Curried parsnip
Courgette and parmesan
Sweet potato and ginger
cauliflower or brocholi with blue cheese.

Quick and easy pea and bacon - 2 rashers of smoked bacon simmered with 3 cups of frozen peas in a cup and a half of vegetable stock til the bacon looks cooked (only about 3 or 4 minutes). Take the medallions off the bacon, blend everything else together really thoroughly til smooth, serve with the chopped bacon medallions as a garnish. Gorgeous and takes 5 minutes.

Whatever's in the bottom of my fridge along with good stock (good stock cube if no stock) and an onion, half a leek, carrot and potato. Season to taste with salt, pepper, garlic, ginger, herbs to taste

My friend made me a delicious soup yesterday. It was butternut squash, roasted red pepper and veg stock blitzed up with a couple of extra light laughing cow triangles. Really tasty and no points on WW apparently.

I made spicy carrot and butternut squash soup the other day. Even my soup hating DH liked it :)
I've just bought some celeriac for the first time ever - anyone got some soup recpe suggestions? Planning on using half for mash, but soup the other half....
