Nigella's Lemon Syrup Loaf Cake from How to Be a Domestic Goddess. It's amazing, very easy, and keeps for a week (and can be frozen). Let me know if you can't find the recipe on her website.

Second Nigella's Lemon Syrup Loaf Cake. Have even taken to last min picnics and trips hot from the oven still in the tin, soaking up the lemon syrup. Makes the car smell amazing and is cool and slices beautifully when we get round to eating it.

Felicity Cloake in the guardian has done a perfect lemon drizzle recipe and it’s absolutely gorgeous and now my go to

I just made the Felicity Cloake guardian one above and it's really delicious. And I'm a terrible baker... It does have some ground almonds in though so not suitable if you need nut free

Third Mary Berry's traybake.

This recipe is so good that the chair of the local WI asked me for the recipe so here goes:

Easy Lemon Curd Cake

Cake

5 oz SR flour
4 oz caster sugar
4 oz Stork margarine (in a tub)
2 eggs
2 heaped tbs lemon curd

Topping

2 tbs granulated sugar
2 tbs lemon juice

  1. Preheat the oven to gas mark 4 (160 deg C fan)
  2. Line a 2 lb loaf tin with baking parchment
  3. Mix all the cake ingredients together and place in the tin
  4. Bake for 45 minutes
  5. Leave to cool in the tin for a few minutes then mix the topping ingredients together and pour over the cake
  6. Cool in the tin for a further half hour before turning out.
