My broccoli soup is pants!!!

I made soup with the broccoli left over from dinner yesterday (threw the stalks in too, waste not and all that jazz)
But it's a little flavourless!!
I have :
Potato
Leeks
An onion
Pearl barley
Quinoa
(For some ruffage)
Veg stock
What's missing? What am i doing wrong?
I'd hate to waste it
Any ideas?

I think if the broccoli was already cooked it won't have a load of flavour. Isn't broccoli soup usually with Stilton?

Yes fekko the broccoli was already cooked but there is still flavor in the stems! I dont have any Stilton :/

Don't add more tastelessness like barley and quinoa! It needs something sharp and salty - Stilton.

Yeah the pearl barley and quinoa seem a bit unnecessary.

Go to the shop for stilton.

Put it in the fridge and go buy some Stilton - there's only so much flavour you can get out of broccoli stems!

If the left over broccoli is already cooked, whack it in last. I wouldn’t bother with pearl barley at all. Do add Stilton and black pepper, it’ll draw the flavour out.

Or...freeze it so you’re not wasting it then 6 months later go back, see it in freezer, forget what it was and so chuck it away Grin

Dijon Mustard!

I make broccoli soup about once a week - and it's just broccoli chopped up, just enough water to almost cover and stock cube. Cook until broccoli is mush, whizz up with a stick blender and chuck in a couple of teaspoons of dijon mustard to taste. If you're feeling extravagant then some grated mature cheddar is also lovely stirred in at the end. If it's a bit tasteless you might have put too much water in, try boiling it down and see if it helps. It should be quite thick once it's whizzed up. But the mustard make a big difference (and tastes brilliant IMO).

It's nice with the soaking liquid from porcini mushrooms in. You can Chop the soaked mushrooms and fry them with the onion/leeks.

Unfortunately one is still keeping it classy in pajamas so I'm sending the dh to tesco for Stilton.

Add more leeks and forget that you intended broccoli soup, just make it veg soup. Your proportions are off and it will never taste like a broccoli soup at this stage.

When I make broccolli soup it has a potato for thickness, a small onion for sweetness, lots of broccoli, stock. I only use stalks: I freeze all the stalks I chop off every time I cook broccoli for the DC/DH, then chop it up in a big pan full on soup day.

Not quite the same but I asked dh to get some broccoli and Stilton soup for lunch. They sold out so he got carrot and coriander. Still disappointed now!

Peas can liven up a tasteless soup. Cook some, purée them and stir in if the Stilton fails to materialise.

Future tip: use much less water than you think you need. The veg are pretty soft once cooked so you don’t really need much water at all.

My grandfather used to make broccoli and orange which was nice - maybe try adding a glass of OJ
