This year I'm tempted to try Linda McCartney's new veggie roast beef with red wine and shallot glaze.

A nut roast type thing featuring chestnuts, or a chestnut based Wellington. Whatever it is has to go nicely with the trad Christmas accompaniments.

Personally I'd find a shepherds pie/hotpot to be a very odd thing to have as part of a Christmas meal.

Who are you cooking for? Not everyone likes mushrooms so it would be worth checking about that.

Mushroom and chestnut loaf (or terrine as it is Christmas) with some cranberries in the mix. Bread sauce and whisky cream sauce plus sprouts, roast potatoes etc. etc.

Roast tofu - delicious!

You take firm tofu and cut it into slices, marinade it overnight in soy sauce/water with nutritional yeast, sage, rosemary and thyme. Then before baking, mix some flour and nutritional yeast and coat the wet slices with it (to make the ‘skin’), leaving some of the herbs from the marinade on the tofu.

Bake for 20-30 mins and serve with all the roast trimmings. They’re vegan too!

They’re also great cold in sandwiches.

Please do a nut roast. I (veggie since I was 18) always feel that a pie is not a good "meat substitute" in a roast dinner. Pie is one type of meal. A roast dinner / Christmas dinner is another and I don't think it includes pie. A good nut roast - not a frozen supermarket one full of mash and grated carrots - Jamie Oliver has a few good recipes online. A very easy home made nut roast is - 1 sachet chestnut stuffing, 1 packet chopped nuts, 1 tin chestnut puree. Make stuffing, mix in other stuff, plus seasoning, parsley, maybe some seeds, and beat in an egg or two. Put player about 1/3 the way up a loaf tin. Cover with cranberry sauce, Add cover with another layer or nut mix and bake according to stuffing instructions, but longer as it's deeper than usual.

I make honey roasted butternut squash. I roast it for about 40 minutes on its own then stuff it with chestnuts pine nuts cranberries and breadcrumbs ( what goes on the mix varies from year to year).

My Mum bought the Parsnip pheiver ( probably not how to spell it) from Marks and Spencer it is also very nice and goes well with all the Christmas vegetables.

I was leaning more towards the nut roast tbh, I think it looks delicious! I think I will find it weird not having pigs in blankets this year. ( I have recently switched to being a vegetarian )

You could do vegetarian sausages in vegetarian bacon if you're really desperate. I'm not a huge fan of fake meat but if you'd really miss them as a concept then you could give it a try.

Assassinated I didn't even think of that I think I might give those a go, Just need to find decent veggie sausages and bacon.
I've tried veggie mince and I didn't like it much at all

Veggie bacon is 1 - vile and 2 - quite brittle when cooked. Not sure it would work for pigs in blankets. Quorn make veggie cocktail sausages though. What to wrap them in though? Maybe strips of marinated aubergine, or perhaps soak some dried porcini mushrooms and use them - dried and soaker will be more flexible than fresh, and tastier.
