What do vegetarians eat with new boiled potatoes?

Haha. Well yes. And butter.

I mean, you can eat them with anything. But I'm struggling to come up with a 'proper' veggie meal incorporating new boiled potatoes.

I think I want new boiled potatoes to be a lovely buttery side dish to... something.

(I have now said "new boiled potatoes" too many times and I starting to doubt that they are real words).

With some salad and feta cheese on the side.

I'd have them with two soft boiled eggs and dip the potatoes into the runny egg yolk. I'd also have a salad or some green veg like green beans or spinach to make the plate look more interesting colour-wise.

Thanks for all the ideas.

I think quiche / pie / tart is probably the correct answer, but I don't eat pastry. I have made a cauliflower crust tart before - will do that again.

In the end I made some brown lentil burgers and bbq'd them. Had with the new boiled potatoes and some roast cauli / broc / sprouts

Not a vegetarian but I'd cut and roast them with cherry tomatoes and olives. Then sprinkle feta cheese all over them. Serve with avocado salad.

make garlic and potato hedghogs basciaullyputting little slit in so thy almost fan and stick garlic I nthe slits and roast.mmmmmmmmm

hash with tomato chunks of potato,mushrooms,,onions,garlic,cheese then eat as is or put couple eggs on top to cook at end

chickpea potato stew
asparagus and pea and potato and feta frittata
potat and lentil curry with crumbled cauliflower
bake into a quiche type thing with broccoli and stilton
potato and vegetable kebabs
3 bean and potato stew
greek potato salad
buble and squeak
Spanish tortilla
jerk potato and black beans curry
omelette
meditarian bake
vegetable bake with hotpot type sliced potato top
roast and then make a warm salad

Quiche here, with a lovely salad. I even like to go back to the 70s and have proper old fashioned salad (iceberg lettuce, cucumber, radishes, spring onions, tomatoes) complete with salad cream with it.

Just plain boiled potatoes with butter? I love potatoes and I love butter but that sounds like a weird and boring side dish to me.

I have an ommlette - usually filled with diced courgette/pepper/parsley & cheese.
