Recipe for leftover cooked chicken?

I have some leftover cooked chicken and have no idea what to make with it? I want to get another dinner from it and there's plenty leftover for this but what can I make?? Anyone know any good casserole/curry etc hearty recipes?? I have a slow cooker too so any hob/oven/slow cooker ideas very welcome Smile

Mine either goes for chicken and chips, or a chicken pie of some sort or other. Chicken and mushrooms, sweet corn etc in a pie dish, a tin of Campbell’s condensed chicken soup in, ready rolled pastry on top. Yum!

I like to soften an onion or two in some butter, add a load of curry powder to taste, maybe some cardamon, then add in chopped up cooked chicken and some cold precooked rice and a handful of peas and/or sweet corn, heat through and scoff. Yum.

Chicken fried rice is lovely with leftover chicken and uses up any veg too!
Chicken fajitas are also handy and can be bulked out with peppers, mushrooms, etc.

I do a Mexican chicken stew, with onions, peppers and kidney beans, with tinned tomatoes, chilli powder, and jalapeños. In fact I'm having it tonight.

I serve it with wraps (and dips with nachos if I have them in). Uses up loads of chicken, is filling and tasty and the ingredients are all things I have in my store cupboard.

I make chicken stew and serve either with mash or a pastry top to make a pie. You can also make it into a pasty if you make sure there's not too much liquid.

You can also make chicken risotto with it.

I am making chicken pie right now with last night's chicken!

Another one for chicken fried rice, simple and quick post school meal on late days for us. Shred chicken, use microwave rice, egg and any beg hanging around. Fry chicken veg, then rice and add egg - simples, on table in under 10 minutes from walking through the door 😃

This chicken casserole is a firm favourite here

I often have leftover chicken and make- risotto, noodle soup, chicken and veg soup, croquettas, fajitas, chicken fried rice, chicken and leek pie, chicken and mushroom pasties, chicken and chorizo stew, chicken and red peppers lasagne, chicken and basil pasta bake- there’s loads to do with some cooked chicken hanging around!

Mix the cooked chicken with cooked onions, peppers, passatta, kidney beans and rice and put into tortillas for burittos! Big favourite in our house.
Also make a white sauce, add tomatoes , mushrooms whatever veg you have and serve with rice or pasta. We call this dish chicken gunge up!
Or we make a chicken and pea risotto.

chicken and ham (optional)and sweetcorn,salt plenty of pepper.stirred into a basic white sauce.serve over rice.taste yummy.

knorr do some great pour over sauce.

Pizza bake - leftover chicken, chorizo / pepperoni, mozzarella, tomato puree, mushrooms/peppers/jalapenos/onion/anything else you fancy. All in a casserole dish, sprinkle with cheese. Bake for about 30 mins.

I often do it with noodles (vaguely) Thai style....stir fry red pepper, spring onion, sugar snap peas/ baby sweetcorn....add the chicken, cut in to bite sized bits, add sploshes of soy/sweet chilli/blob of peanut butter (or whatever Chinese/ Thai sauces you want), add cooked noodles, mix together, serve immediately. Easy peasy and ready in ten minutes max.

We just had ‘diamond chicken jubilee” from the Leon cookbook (Google it, the recipe is online).

It’s described as a sandwich topping but we had it in big jacket potatoes, absolutely delicious and dead easy to make - roast chicken, mayo, natural yoghurt, curry powder, seasoning I think? There’s a mango salsa you can make to go with it,

Our basic leftover chicken curry:

Cook a couple of onions, slooooowwwwly, in ghee or vegetable oil. Add chopped garlic, grated ginger, chilli (they freeze well chopped) to taste - you'll need to experiment - my lot like it heavy on the garlic but easy on the chilli - then any veg which needs using up e.g. chopped carrot, peppers, zucchini, aubergine etc along with a teaspoon each of cumin, coriander & turmeric. I like to chuck some fenugreek in too.

Add half a dozen fresh ripe tomatoes (or a tin) OR tin of coconut milk for a creamy curry. If kids are weird about veg you can blend the sauce at this stage, once the tomatoes if using have cooked down a bit.

Chop your chicken & throw in, along with a handful of frozen peas, spinach or beans. Simmer gently to hear through & finish with a teaspoon of garam masala & chopped fresh coriander (which also freezes well so I buy a big bunch, chop & freeze).

Serve with steamed basmati rice &/or naan.

Also good with lentils added with the veg or a tin of chick peas instead of/as well as the chicken.

Not terribly authentic but a popular staple here!

Make a risotto - fry onions and garlic in butter/oil, stir in risotto rice, add lots of stock, wait until rice is cooked, adding more stock as needed and simmering probably for about 20 minutes. Stir in chopped chicken and some single cream. I always like to add a green vegetable (asparagus usually) too, would probably do so in the latter half of the rice cooking stage.
