Gluten free AND vegan meal ideas?

Hi I was in the process of attempting to go vegan when I discovered I was intolerant to gluten over the summer. So going vegan has taken a bit of a hit but I want to get back on track. I don't have a lot of time to cook big extravagant meals (googling recipes seem to want me to blend cashew nuts and the like) but I also want to try and branch out a bit from jacket potato and bean chilli! I was just buying vegan burgers before but all the ones I found contain wheat. Is it a lost cause or does anyone have any simple go to meals they can share? Thanks

My sister's best friend is a GF vegan. She has a load of great recipes. I'll ask her.

Curry will be your friend here!

Spinach and chickpea curry
Sweet potato and lentil curry
Can all be served with rice!

There is a lovely vegan avocado and tomato pasta recipe online that works just as well with free from pasta.

Also quinoa can be used as an alternative grain, so you could make Moroccan vegetables or a ratatouille and have it with quinoa.

Hi Zeitgei5t,

Below is a recipe for bean burgers ( that I've adjusted from Jack Monroes one). They are a bit of a faff to make but freeze really well, so I made about 30 at a time ( Double the recipe) and freeze. I grate everything in the magimix and that makes it quicker. I use polenta instead of flour so they are gluten-free, I suppose you could also sub the polenta for chickpea flour? I know it's still quite faffy though



Could you do Stuffed peppers?

Cut the top of a couple of bell peppers and "empty them out"
Dice an onion and some garlic and fry off in a deep frying pan in some oil, then add a handful of rice and stir then some chopped mushrooms or courgette or pumpkin or some spinach or whatever then add some tomato purée, some dried herbs, salt and pepper and a glass of white wine or vegetable stock (or even water).
Spoon the mixture into the peppers, (stood up in an ovenproof dish) and cook in the oven at about 180°C for 30 minutes.



Bean Burgers

2 large grated carrots
2 large grated onions
4 cloves of garlic, grated
A handful of cashew nuts (also works with peanuts etc.)
Large tin of kidney beans
150g of very fine polenta
Juice + zest of two limes
A bunch of parsley
A bunch of coriander
Dried cumin
Dried corriander
Olive oil
Salt
Pepper

Put the grated onions, garlic and carrots in a saucepan with the oil, leave to sweat a few minutes, add the spices and salt and pepper.

Rinse the beans well, and add them to the pan, after a few minutes, add a little water to prevent it from sticking to the pan then when the mixture starts to dry add the polenta, then the lime juice and zest and mix well.

Mash up the mixture till it looks like lumpy mashed potato and add the cashew nuts with, (if all has gone well it should look like an unappetizing lumpy paste) once cool add the chopped herbs.

Put in the fridge for a few hours to firm up, then form burgers and coat in more polenta. Then freeze or fry in a lightly oiled pan

I serve the burgers with

  • grated carrot salad ( also use the magimix) with a dressing with lemon juice, mustard, red wine vinegar and garlic.
  • a sauce made from tahini mixed with water and chopped mint (also in the magimix)
  • or rice noodles with an orange juice/zest and sesame oil vinaigrette
  • green salad

I'm veggie and just found out this week i have Coeliac disease, so I'm following this with interest. Really need some ideas!

If you have Facebook the Bosh food page has loads of vegan ideas. Not all of them are gluten free, but there are lots of recipes you could adapt. We like a lot of rice bowl/Asian style dishes. If there is anything with noodles you can use rice noodles.

I'm not vegan, but for lunchtimes I favour soup with a large salad (olives, avocado, coleslaw, leaves, sundries to park, cuc etc) yum.

GF pasta is ok if you don't over cook it. Might give you a few more options?
Also is quinoa?

Sweet potato, chick pea and spinach curry.

Bean chilli.

Lentil cottage pie.

Tofu, veg and rice stir fry (definitely buy sesame oil).

Any bean burgers.

Nachooooooos.

Quinoa stuffed peppers.

Fajitas with gluten free wraps.

Soup.

Portobello mushrooms, chips and vegan coleslaw.

If you can find good gluten free pasta (corn and quinoa ones are tasty) tescos free from soft cheese is actually delicious, add thyme, garlic, bit of stock and mushrooms for a pasta sauce with kale my god it's good.

Baked cubed sweet potato with spiced black beans and corn + guacamole and chunky coriander and lime salsa.

Black bean stew. Root veg casserole.

Lentil daal.

Baked paprika aubergine on anything.
