A MASSIVE what's for dinner challenge - I need a week's worth of meal ideas for seriously restrictive eaters!

MIL and her DH are coming to stay for a week (arriving tomorrow!) Now, she is 71 years of age and, around 5 years ago, took a piece of her hair into a woman in the back room of a crystal shop who told her not to eat a variety of foods as she was intolerant (even though she had never experienced any symptoms in 66 years. Whole other thread...) MIL has also diagnosed her DH with his own intolerances Hmm. So, very long story short, I would be most grateful for recipe ideas my whole family can eat that do not include:
wheat
dairy
red meat
root vegetables (although apparently potatoes are OK)
wine

No bread in any of its guises, no cheese/butter/cream/yogurt please.

Can you handle the challenge...? I'm all out of ideas. Oh, and it's mine & DH's busiest work week of the year, so simple recipes would be especially welcome! TIA.

Lentil ragu served on polenta? Chicken and potato/other veg traybake? Steamed fish (wrap in foil and oven cook with a bit of oil and lemon juice) with rice and veg?

Rice noodles and stir fry
You can get loads of wheat-free pasta types in supermarkets these days, so some kind of pasta and tomato sauce?

Paprika chicken with rice

  • cut chicken breast into small, thin strips.
  • shake the chicken pieces in a bag with flour (rice flour works fine for this so you can avoid wheat flour), paprika and a pinch of salt.
  • fry off chicken in oil (I usually use butter but olive oil will be fine)
  • add sweetcorn & tinned tomatoes
  • simmer until cooked through
  • add salted peanuts at the last minute before serving and serve over rice

Chicken or salmon stir-fry with rice. Use tamari instead of soy sauce.

Cod baked with tomatoes, peppers onions and olives served with potatoes, rice or quinoa.

Vegetarian chilli with rice, served with salsa and avocado. You get sour and cream on yours as well.

Leek and potato soup, or other soup.

Tagine made with chick peas or chicken, aubergine, peppers, onion, preserved lemon, dried fruit. Serve with rice or quinoa and a green salad.

Mushroom and potato omelette with green beans and a big green salad.

Nut roast/ lentil "meatloaf" with greens and mash.

Roast chicken, roast potatoes, cabbage, broccoli, cauliflower.

Make a sort of spicy vegetable stew with (eg) onions, peppers, mushrooms aubergine, leeks, chick peas, tinned tomatoes. Start by softening the onions with some cumin, coriander and chilli. When it's done, stir in do.e chunky peanut butter. Serve with brown rice.

Also Thai green curry.

Risotto or paella if you’re chickened out
Chicken roast is a good idea
Stir fry with Salmon and rice noodles (v quick!)
Sausage pasta bake (gluten free pasta)
Chicken wrapped in bacon with grilled veg

Oh wow! An incredible array of ideas - thank you all so much! Actually looking forward to the challenge now with so many delicious suggestions, especially as I have most of the ingredients for the majority already - I think I just needed a menu refresh. Thank you all again.

Simplest and quickest ever - microwave fresh or frozen salmon fillets drizzled with soy sauce and microwave rice pouches with some salad or green veg - about a five minute job!

You have the patience of a saint.

Lentil spag bol on courgetti or gluten free pasta/slim pasta
If eggs are allowed, huevos rancheros, frittata and omelette
Pumpkin and chickpea curry
Spinach and red lentil soup
Chicken sausages with mash and peas/broccoli
Potato/cauliflower/pea/corn coconut curry on rice
Spicy aubergine stir fried in tamari, garlic, chilli, onion, ginger, green pepper and served on rice

My mother in law is not dissimilar but she blames/reveres GP (who must have been so fed up telling her she was healthy he decided to say "If it makes you feel better".

Risotto primavera with salmon fillets
Roasted chicken, potatoes and fennel/shallots with green veg.
Prawn curry with rice
Fishcakes /fish pie using cornflour to make sauce
Paella
GF pasta
Omelette if she doesn't count eggs as dairy with salad
Dover sole in lemon shrimp butter with crushed potatoes. Veg
Stir fry with rice noodles.
Tagine with cous cous
Nice chunky soup thickened with potatoes or pearl barley. Serve with GF bread.
Cod in Parma ham with tray baked ratatouille

Risotto - you can put in chicken, veg, beans - whatever - just ensure you use a wheat free stock cube e.g. Knoll (I think).

Pasta - we use turkey mince for bolognaise and you can buy GF pasta really cheaply from any supermarket. Make sauce from onion, tinned tomatoes, stock cube, herbs.

Currys - just check if you're using powders or jarred sauces. I think standard curry powder is usually wheat free - just a mix of spices.

Roast chicken - check any stuffing/gravy powders for wheat though. We make our gravy with wheat free stock cube, cornflour and gravy browning.

Any kind of plain (no batter or breadcrumbs) fish with chips (check if buying them they aren't coated in wheatflour) and peas.

Salmon and veg is always nice. Soy sauce often contains wheatflour - I think Tamari (from health food shops) is wheat free.

Check out the freezer section in Tesco - they do a range of fishcakes and things that are wheat and sometimes dairy free.

If they do drink, M&S does gluten free beers in small bottles.

I would get them a loaf of Genius Toastie bread for breakfast. You can freeze it and it's one of the better GF and milk free loaves. They sell it in Tescos I know - probably other supermarkets as well.

Eggs and baked beans - for breakfasts. We have potato waffles in the freezer too. Not very sophisticated but for a GF/Milk free person, they're great.

Another one to add was Spanish omelette - just wondering now though if they can't have onions. That makes things more tricky if so.

I really am overwhelmed (and extremely grateful) for all these wonderful recipes and ideas. The great thing is that she's not actually intolerant to any of it, so as long as she can't identify it in the meal, we're all ok! I have a lactose intolerant SILand know the difference - MIL eats all the chocolate cake etc that she wants when nobody's watching (we've all 'caught' her on numerous occasions) but it does make life easier to accommodate her when she's here. I know it's ok if a little bit of flour slips into the gravy or a dash of yogurt in the sauce. One of the hardest things to sort is the lack of wheat she insists upon as she says it's not the gluten that's the problem, but the wheat itself, hence gf pasta/bread etc is refused on this basis. We had chicken & corn chowder last night which went down a storm and it's roast chicken (no stuffing!) today, but I'm looking forward to a bit of salmon and rice/noodles during the week. You've all inspired me!

pesto chicken.
search google for boulangerie potatos.yum.
what about a few tray bakes.with some pork,potatos.different veg or some cherry toms.bit of stock poured over if you like.
pesto chicken.
rice salads.
rice with veggies stirred through with fish.
crusted fish.and instead of wheat bread use some crisps.
chicken stir fry
thinly slice some potatos
jacket potato cooked chicken and salad.
jacket and beans
salmon fishcakes.
hash browns
what aout a fish potato courgette tray bake:par boil some potatos transfer to dish along with courgettes(other veggies) sprinkle or spray with oil roast for bout 20 until golden
add soe cherry toms and fish of choice. season.roast for another 10-12 then check fish.
traybake work wonders for basically any meat or fish and veg :)
pork chops in a tomato bases stew sauce.
fish or chicken curry
rice pilaf
jambalaya
risotto
tuna steaks.

kateandme I love Boulangere potatoes! I think I might make them with the chicken today instead of the usual roasties. Also, my mum gave me a recipe last night for wholegrain rice with turmeric, peppers, mushrooms, tomatoes, sweetcorn, onions (I'll see if I can get away with them) served with salmon, which my dad assures me was delicious.
Tray bakes and casseroles are a godsend during a busy time too.
purplecollar you've also reminded me that M&S do a 'Made without wheat' section which includes things like tempura chicken which the kids love too.
