Help! Dinner party dessert recipe

I've volunteered to do dessert for a dinner party next weekend, argh. There's 8 adults, one doesn't like hot puddings, one is pregnant and one is vege (so basically no gelatine).

Does anyone have any good recipe ideas? I can only think of lemon or chocolate tart. These would be fine but do I just go with the BBC good food recipe!? Hellllp

Pavlova is very easy and fits criteria.
Poached pears with mascarpone (or miniature figs if you can't be bothered with pears)
Homemade ice cream
Baked cheesecake

Lemon tart sounds lovely. Or you could offer two dishes - maybe an easy fruit salad or sorbet?

Lemon meringe pie. 1 pack of nice biscuits, 110g butter. Blitz biscuits, add butter and line a fluted dish with the biscuits. 7 eggs, split yolks and whites. 2 tins condensed milk, 250 mls lemon juice. Mix condensed milk, lemon and egg yolks together with a pinch of salt. Pour into biscuit lined dish and bake at 180 for 10 mins. Dust with icing sugar or flour when out of the oven. Whisk 7 egg whites, 2 cups of caster sugar and a dash of vinegar. When meringe is light and fluffy put onto base and bake for 10 mins at 180. Turn oven off and leave to sit in oven for further 10 mins. Voila 😀😀😀

This is really good - I made it one Christmas without the booze (subbed chocolate milk/cold hot chocolate) as there were kids and jazzed it up with some bronze crunch stuff you put on cakes. Really easy and really tasty.

Ooh I made amazing chocolate pots this other day and they are seriously good. Really easy as can be made in advance, and you can decorate how you want. They’re delicious with a coffee at the end of the evening.

Meringue might be best avoided as there's a pregnant guest who may be avoiding uncooked eggs.

mirangue.you can buy or make.cream mixed with some icing sugar(optional)fruit.
or choc version where you use chocolate button and maltesers and fudge piece instead of fruit, with cream and mirangue and caramel sauce swirled through mmmm works really well if you do a stack/tower
melt in middle pots.
cheesecake
trifle
posset
ice cream cake.

Nigella’s meringue gelato cake. Really easy and quick to prepare the night before. It uses shop bought meringue nests so the egg is pasteurised and ok for pregnant guest. Serve with the fruit of your choice.

Some great ideas thanks! That boozy chocolate trifle looks amazing! And baked cheesecake could work with some type of berry compote. And lemon posset is another one I hadn't thought of! Going to look through these recipes in a bit.

I'm a bit unsure about the meringues and choc pots becaus rid the raw/undercooked eggs, I'm not sure what the guidelines are. As delicious as they sound.

My standard pudding for a dinner party is Nigella's chocolate and raspberry pavlova. Looks fab and no real effort.

In what way does meringue contain undercooked eggs?

Report
fizzicles · 01/10/2017 20:35

Depending on how it's made, the meringue isn't always cooked at a high enough temperature to kill potential salmonella. You essentially dry out meringue, rather than cooking it, so temp is often low and cooking time long. It is unlikely to make anyone ill, but there is some risk.
