2 veg box deliveries back to back with 4 onions. I have EIGHT onions. Going to dice and fry and freeze some, any idea for others (aside from the obvious French onion soup)

Now the weather's gone to shite, I'm planning on making a big vat of chicken casserole this weekend, plenty of onions and carrot.

They last bloody ages in the crisper box in the fridges, week and weeks, no need to rush to use them.

Blend them with a splash of water, then freeze. Blend either alone or with tomatoes. They make a great base for curries.

Boil them for 10 min. when cooled but in half. Put them in an oiled baking tray. Cover each with a mix of breadcrumbs/garlic/parsley/salt and pepper/parmesan and bake them for 40 min.
or my favourite salad: tomatoes , chickpeas, parsley, onions ., crystal salt and olive oil

I've done this recipe - also did it with larger onions and added the bacon into the stuffing and added breadcrumbs too.

Am I the only one who gets 8 onions most weeks?!

In my opinion onions go well in practically everything. Base for soup, curry, stews, pasta dishes. Go great chunky in tray bakes, and add a flavour to roasts.

I am with you Rinceoir, lots of onions here, we are in the South Seas and on many islands you can only get onions and garlic and of course coconut 😅 I use onions to pad out meals, we use lots of tinned veg!

I get through about 8 a week too.

But they do last a very long time. Just keep them in the fridge until you need them.

In terms of shopping mishaps it’s not too bad at least. I recently accidentally ordered a kilo of dill. Was fun trying to use that!

stuffing for roast chicken
veg soup
onion gravy for sausage and mash
stir fry
lamb tagine

mmmmm roasting all the way.on there own.
with peppers.tomatos.meat
with garlic and sweet potatos.
any traybake with onion.
easy as anything chop into any shape.oil.season.oven.mmmmmmmm
