You could cook it today and have it over the next couple of days, chicken sandwich are great for simple lunches and salads. You could make a chicken stew, soup, shred it up and have it with tacos and all the extras like guacamole, salsa and sour cream and some Mexican rice
If you wanted to freeze it you could make a great chicken curry.
It is a 1.5k bird, short dated, so I could just freeze it as I don't feel like doing a roast. It would be great to cook it today then freeze it for a busy day, but I am just a bit stuck on how to cook it. Any brilliant suggestions?
