Bakewell tart traybake

DD wants to bring a bakewell tart into school for her birthday. I think it would be easier to feed 30 as a couple of traybakes rather than a round tart as I usually make.
Does anyone have a recipe? Does it matter re size of tray or do i just make it using the usual recipe into a different size rectangular tin? Help!

So long as the surface area is the same as your round tin, you can use the same recipe. If it is different, adjust the recipe volumes by the same proportion as the increase in tray size. With a Traybake, being shallow, it shouldn't make much (if any) difference to cooking time or temperature.

Isn't the school nut free?

I have made a traybake and also a cherry bakewell loaf cake before but think I just made it up from a regular tart recipe, sorry!

Defo check about the nut policy at your dd's school.
I'm not nut free though ( in many ways!) and now really want a cherry bakewell!

and no, surprisingly the school is not nut free. DD buys nut pots all the time and she checked with her class before asking me to make a bakewell tart.

i use ready made shortcrust pastry

i blind baked the (bought) pastry and left cool
made a compote with good quality raspberry jam and juice of 1/2 lemon
for the sponge, I increased the recipe by 50% (165g butter, sugar, ground almonds. 3 large eggs, 37g plain flour, 3/4tsp baking powder, lemon zest), reduced the cooking temp to 180 and baked for 30 mins.
DD better appreciate this smile
