I cook them once a week. Usually just roast slowly in stock (you can get ham stock or chicken)

Or I place them in a roasting tray with peppers, red onion and courgettes etc - season with garlic salt and herbs

Or I slice them and cook I'm a sweet and sour sauce

Or casserole with cider

Baby potatoes are great with the roasted veg. Easiest meal of the week and only one dish to clean

I did some tonight, just fried them until just cooked then whizzed up some gruyere and breadcrumbs and put it on top (thick because I'm greedy) and then popped them under the grill for a few mins.

I think a little thyme in the crumb mix might work but I was just winging it.

Dip in seasoned flour, then beaten egg, then dry Paxo sage and onion stuffing. Press to ensure stuffing mix adheres and forms a lovely crust all over. Bake in moderate oven. 'Tis lovely.

I also marinade in BBQ sauce

Now I'm starving ;)

For boneless pork chops/escalopes I flatten them with a meat tenderiser, coat in breadcrumbs (dip in flour, then beaten egg, then breadcrumbs), and fry. Otherwise I find them too dry (although that might be my cooking).
