Hundreds of cooking apples

Looking for inspiration - have been gifted lots and lots of cooking apples. I've made a strudel, a crumble and am planning a cobbler. Any slightly more unusual ideas/recipes to inspire me?

Sounds boring but my nan always mixes a bit of golden syrup with butter melts it them mixes in cornflakes until they are covered. Puts the mixture on top of stewed apple in a pie dish cooks until the cornflakes edges turn a bit brown and that's it. Sounds dull but it tastes so good.

Chutney?
Stew lightly and freeze in small portions. Defrost later for crumbles, apple sauce etc

We always have a lot from a dd's tree. I make apple chutney and stew - not for too long - a lot to freeze for apple crumbles etc. later. Also apple cake, which is lovely and moist.
Top tip - don't bother peeling them! I stopped bothering some time ago, except for taking off any manky bits, and for the apple cake. Nobody notices the difference, let alone cares.

With Christmas just about looming on the horizon, another thing that's really nice for using up stewed apple is an apple and mincemeat pie. Pastry on a plate, layer of mincemeat from a jar on top, good layer of apples on top, pastry lid. The flavours go really well together, especially if the apple is not too sweet.

We have tonnes of apples at the moment. So far I've made Indian spiced chutney, toffee apple jam and apple cake. Plus stewed apples for the freezer. I just need to work out what to do with the 5kg i have left!

Pre rolled bought puff pastry, thinly slices apples, sprinkle of brown sugar and cinnamon on top, serve warm with salted caramel ice cream

pork,cider and apple pie or stews
tarte tatin.
freeze then make into little jam jar crumbles for xmas pressies.
if you really have to many what abiut local sheltr food kitchens.if they don't take the raw you could make something to take from them
restaurants.
make some muffins
Norwegian apple cake
blackberry and apple cake.
berry and apple Yorkshire puddings.
cook down and freeze

I'd stew lots of them and freeze then can be used later in porridge or muffins or with pork/chicken roast dinner.

Apple jelly uses up loads. It is delicious and very good with cheese!

Chutney - I make an indian one that's basically a lime pickle recipe using apples instead of limes (you don't need to cook it anywhere near as long)

Apple jelly - I think sweet apple jelly is a bit boring so I knock down the sugar a bit, cook the apples with chillies and rosemary then when I put it into the jar I add a sprig of rosemary (blanch it in boiling water so there's no germs going into the jar) - great with cheese.

And last year I mulled apples - stewed them with sugar, red wine, star anise, cinammon and cloves, bagged them up then stuck them in the freezer. You can use as a base for pies, crumble etc or just warm them through and serve with ice cream.

I have a lot of apples....

Cabbage and apple slaw it great on a miso glazed chicken burger or as a side option.

Apple cider mimosa are delicious if your entertaining along with spiced warm cider.

Apple crumble ice cream with a toffee sauce.

Caramel candied apples are great for making with the kids.
