I am a rubbish vegetarian. Not in the respect of not eating meat or fish, that I am very good at. But cooking interesting, and more importantly, nutritious dinners each night, not so much.
So I mainly eat toast. Or sandwiches. Particularly as I work a variety of shifts each week, and it's just easy. But I am low on energy and damn it, I want better meals.
So I am hoping that having started this thread, I can sit back and watch it grow, with daily updates from the more
grown up organised amongst you, which will inspire me to join in.
Anything able to be cooked ahead then frozen is especially welcomed, but not essential.
I'll start us off.
Tonight I will be mainly eating.... mushroom pate on toast
I'm gradually becoming a vegetarian but I can never think of what to make so I'm gonna be keeping an eye on this thread for ideas!
Oh, and I just had a bowl of sweet potato and coconut soup that my friend made too much of so gave me a bunch to freeze. It was delicious!
Just went to the garden and picked beans [French and runner, green and purple], courgette and tomatoes.
Frying onion, red pepper and courgette in a pan, will parboil the beans after slicing, add those in, and then add pasta, some fresh toms and passata and have with cheese. Season before it comes off the heat as required.
Mushroom ragout (mushrooms, onions, garlic, red wine, green lentils and herbes de Provence) served with creamy mashed potato and baby spinach salad
Dhal with basmati, cucumber raita, tomato salad
Both are freezable (except the rice but that takes 10 mins tops, and the salad) and if left in the fridge a couple of days taste better.
Tonight is grilled halloumi with cous cous, loads of veg and a spicy tomato sauce.
The rest of the week is...
Curry (a cheat using a jar of sauce, boiled eggs, frozen spinach, chopped peppers and onion plusxa tim of chick peas).
Spicy quorn meatball and roast veg pasta with the leftover sauce from today.
Veggie fajitas with homemade guacamole
All good so far, interesting to see what everyone's having tonight.
@AlternativeTentacle - I always though French/green/runner beans were the same thing, are they not?
Mushroom ragout sounds good @Melassa - might try that tomorrow.
@PurpleDaisies - am going to need specifics on the 'loads of veg'. For a vegetarian I am quite poor at eating vegetables so need inspiration on sides also...
No problem! I've got roasted red and yellow pepper, courgette and onion plus boiled broccoli, mangetout and baby corn. I'm lucky in that I really like vegetables. There's also a tin of chick peas in with the cous cous.
Where do you get mushroom pate from? I looked the other day as really fancied something like that!
Chickpea, spinach and sweet potato curry, poppadoms, naan bread and chips. I did however eat out off the vegan menu
Did my shopping today so rough plans for the rest of the week are;
Tomorrow night boringly going to have some sort of stuffed mushrooms as I have a real craving for them with a veggie cous cous thing
Spicy red pepper and quinoa stew
Lentil pie topped with garlic and spinach mash
Have beetroot in the fridge I need to do something with too. Maybe make it pickled and shredded with carrots, pistachios on top with falafels and harissa yogurt dip.
Tonight is this curry with cheater's tinned lentils.
(I'm a vegan who's gradually learning to eat vegetables).

And it was lovely and made a load so I have frozen it in portions.
Next Monday we're having roasted veg with baked feta and sweet potato wedges
@SandysMam It's from Holland and Barrett and is lovely. You can probably get a different kind in Tesco or similar but I like the smooth ones below.
Tonight I am having southern fried Quorn dipper thingies with coleslaw and wedges.
Not what you were looking for I suppose.
Tomorrow I will hopefully make 3 bean chilli and rice.
Thursday spinach and ricotta tortellini
Friday egg and fat noodle stir fry thing
Not a veggie but today I made halloumi and veg kebabs.
Whizz some olive oil, lemon juice, fresh parsley (and pesto if you like it, I don't!) in a blender with some salt and pepper.
Put it in a bowl with some cherry tomatoes, chopped up halloumi, peppers and courgette and mix it up.
Thread into a skewer and grill till cooked.
You can keep some of the marinade to drizzle on when cooked.
Ooh good idea for a thread! Tonight we're having sweet potato and spinach dahl.
I'm roasting beetroot, squash, fennel, red pepper with loads of garlic, lemon juice and chilli flakes.
Then I'll stir that into pasta with cheese.
SirNiall, that is gorgeous. I used to chuck some capers and garlic into the marinade too. Halloumi is the one thing I miss since going vegan, especially cooked like that.
Mushroom, pea and leek risotto with grana padano cheese and steamed broccoli
Egg frittata with red onions, three colours of peppers, sweet corn, chopped potatoes and garlic and herbs. With garlic bread and salad
Quorn chilli with kidney beans, peppers and courgettes and brown rice. Not everyone likes Quorn so you can do it just with plenty of chopped mediterranean veg and spicy beans.
Sweet potato, red lentil and lemon dahll with garlic and chilli spinach and naan breads
Thai green curry with coconut and peanut sauce, baby corns, sugarsnap peas, butternut squash and peppers with jasmine rice.
Eggs, chips and beans
Sweet potato falafel in wholemeal pitta and salad.
@millifiori - wow, all that for dinner tonight, you must be stuffed!
I do like quorn fortunately. And egg, chips and beans also
@Joinourclub - love the sound of that! Can you roast pre-cooked vacuum-packed beetroot or just the raw stuff? As I have some of the packaged kind in the fridge waiting for inspiration....
Can't remember all the names now but spicy red pepper and quinoa stew will definitely be one that I try. And I do love halloumi, probably a bit too much
Ooh I'm enjoying this thread.
We still eat a bit of fish, so tonight we had Spanish ish fish, which is a recipe of my own creation and apart from the fish is basically veggie (bear with me). I fried some onions, garlic, red pepper, sun dried toms and lots of smoky paprika until they were a little intentionally burnt, then added sliced potatoes and a jar of passata and boiled it for a bit. For the last five minutes I added a piece of fish each on top and steamed them cooked with the lid on. The left over smoky tomatoey potatoes are going to have a tin of chickpeas added and maybe some spinach and that's for dinner on Thursday.
Tomorrow we're having leek and potato soup. We had a lot of potatoes left over from last weeks veg box and the next installment come on Thursday so lots of potato based meals this week.
Friday we're bailing out to my mum's who doesn't know I've stopped eating meat so I'll probably have a fried egg sarnie with a side order of parental condemnation while my kids eat something like roast chicken.
Saturday we'll have mushroom and leek stroganoff out of a packet with pasta so I'm all carbed up to run 16 miles on Sunday morning.
Sunday the kids will have veggie fritters and we'll probably have take out curry.
Boil up a cup of peas so you've got them ready to tip into omelettes and curries.
For dinner tonight we're having baked sweet potatoes with feta and black olives on top and a salad on the side. I might rinse off half a cup of chickpeas for my ds and sprinkle those on top with some olive oil and salt.
Tomorrow night I'm going to cook some lentils with a cube of veggie broth and then bung them into nice jarred sauce and pour over pasta.
