The Veg Box Menu Planning Thread

Combination of being nosey and wanting to skim ideas off other people...

What are you getting in your veg box this week, and what are you planning on doing with it?

This week we got:
Carrots
French beans
Romanesco cauliflower
Curly kale
Mixed salad leaves
Sweet mixed peppers

And we are having:
M: Cauliflower Cheese
T: Chef Salad
W: Harissa cabbage and white bean stew
T: Tofu Stir fry
F: Roasted Veg and puy lentil medley
S: (staying and DM's)
S: Carrot soup with homemade cheese scones

ooh just found out that I can order an additional "squash box" with my usual order - not sure what I will be doing with 4 different squashes, but I am very tempted! They keep for months any way Grin

What's chef salad?

Just using up leftovers in a salad, so anything like left over roasted veg, last few olives in a pot, grated cheese, /12 tin of kidney beans etc...
I tend to top it with a dressing usually made from leftovers too either the end of a pot of hummus or salsa.

The one we had this week had blanched and cooled kale, peppers, olives, rocket, french beans, grated carrot, grated cheese and a dressing made from the oil the olives came in, a splash of orange juice and some white wine vinegar. DP had some chopped up chicken and bacon on his and we both had a poached egg.

This week we had:

Potatoes
onions
tomatoes
carrots
romanesco
cabbage
green pepper
beetroot

So far I've had:
roast romanesco salad

mashed potato, carrots, and onion in the stuffing for roast chicken
tomatoes for snack

I'm on a low calorie day today so will have some cabbage for dinner, possibly stir fried with green papper and mushrooms.

I've roasted the beetroot and might use one to make home made humous

I find beetroot really hard to use up mainly because I don't want my entire dinner to be bright pink! Beetroot falafel burgers are my usual go to.

This week we got:
Curly Kale
Butternut squash
tomatillos
patty pan squash
cherry tomatoes
fennel
broccoli
cos lettuce

We are having
M Lettuce Tacos
T Quorn steaks - fennel puree, cream cheese sauce, wilted kale & green beans (left from last week)
W Vegetable and chickpea curry
T Squash rosti and poached eggs wilted kale
F Veggie Kievs, BNS mash and broccoli
S Out at MILs
S out at lunch time so something quick and light either frittata or stirfry depending on mood/hunger levels

W: carrot and pepper crudites with betroot humous

Th: Other beetroot and some cabbage will be a sort of borscht for my 500 calorie day.

F: Half a carrot grated into overnight oats with walnuts, maple syrup and cinnamon for a "carrot cake" flavour.

Weekend: clear the fridge soup, to be frozen for future lunches.

hairspray.if you cut in half and roast your squash,then scoop out and chop most of middle.
meanwhile cook a kind of marrocan mince,cumin,tomato,couscous filling sprinkle with some feta after you've stuff the roasted squash
or make a chorizo one goes great

Aargh just typed it up and it went!

Beetroot - corned beef, potato and beetroot hash.

Kale - generally am stumped but we've had "crispy seaweed", or colcannon type thing with bacon in. DS eats the bacon and leaves the rest but the rest of us like it.

Cauli/broccoli go in with mac n cheese, the kids hoover that up even DS who "hates cheese".

This week we also have chard (am going to try a lamb and chard stir fry) and rocket (pizza and rocket easy tea).

Carrots go in a chicken and carrot tagine, or grated = carrot salad with lemon juice, olive oil, and raisins if you are not me, or in cole slaw.

Kate that sounds nice I'll have to remember that, would 1/2 a squash do 2 people? because I can hold back 1/2 of what I don't use tonight and make that next week perhaps...

I just wilt the kale I get with butter or olive oil and serve as a side, sometimes I put chopped walnuts and capers through it too, I would never have bought it in the supermarket but I have found I really like it! And you can tweak the flavors so it "goes" with most things:
garlic and chilli is nice with chinese food,
coconut flakes and ginger go well with a curry,
pumpkin seeds and lemon are fab with a poached egg for brunch....

Hmm I can't see my DC being that excited about kale even as a flavoured side dish!

Yes even my relatively omnivorous DP tends to say that many cabbage type veg are "a bit chewy".

Veg box day today!

This week we have got:
Carrots
Beetroot
Cauliflower
Savoy cabbage
Baby leaf spinach
Mushrooms

Neither of us like mushrooms at all so they will go to DM and I find beetroot hard to cook with so it will be an interesting week I think!

Off to do a meal plan....

have you had roasted onions sweet potatos and beetroor before hairspray really good.
make a chutney
goes great with fish or mackeral wamr beetroot salad
honesy roasted carrots and beetroot.

kale can be good stirred through your cheesy pasta dishes

think half squash might be ok yes.if its a decent size.try and see you could always pad out more filling

Kate while DP will eat anything I am slightly fussier!

Not a meat eater - will eat fish very rarely if pushed

Also currently slimming so no refined carbs so bread, rice, spuds, pasta and sugar are out! But I can usually make decent subs with chickpeas or quinoa!

M: Mexican omelette Wraps
T: stew and dumplings (with chickpea flour)
W: beetroot burgers bunless with a salad for me
T: Curry & cauli rice
F: ??? have a friend coming over and she is a bit of a fussy eater when it comes to veggies so I will probably just do dips and finger food picky bits so she doesn't feel uncomfortable might bake a camembert!

Yummy meal tonight!

Mixed sausages (clearing out the freezer)
Mustard mashed potato (orindary mash with a tablespoon of wholegrain mustrad stirred in)
Saute cabbage with fennel seeds
Onion and red wine gravy

We had chicken and carrot tagine, all devoured it in double quick time (even DS ate the carrots! it has honey in it which I think is the trick).

I love stuffed cabbage rolls

I suff mine with a mix of green lentils and sauteed finely chopped onion, celery, peppers and andy other veg I have hanging about.

This week we got:
Leeks
Romanesco Cauliflower
Swiss chard
Red peppers
Butternut Squash
Yellow Peppers
Salad leaves

so far we are having:
Mexican stuffed peppers with salad
Creamy leeks, quorn chicken and wilted chard
beetroot falafel and cauliflower cous cous
Roasted squash fritters poached eggs and green veg

saute cabbage with bacon and onions!
par boiled potato in dish- cabbage -bacon sprinkle over some grated cheese.yum.or stir cabbage through mash potato
adding cabbage to a stir fry.
light stew of chicken thighs,potatos,stock.carrots.cabbage,peas.bit of cornflour sometimes to thicken. stir through some crème fraiche right at the end.
