Lentil Soup?

So far I'm follow this recepie -

100g lentils.
1 onion.
2 carrots.
2 medium potatoes.
500ml water.
1 ham stock cube.

I don't remember the last time I made this and it seems really boring. Someone surely has a better recepie than me 😂

2 tsp medium curry powder
3 tbsp olive oil
2 onions, grated
1 eating apple, peeled, cored and grated
3 garlic cloves, crushed
20g pack coriander, stalks chopped
thumb-size piece fresh root ginger, grated
800g sweet potatoes
1.2l vegetable stock
100g red lentils
300ml milk
juice 1 lime
Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins. Add the olive oil, stirring as the spice sizzles in the pan. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then gently cook for 5 mins, stirring every so often. Peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth using a stick blender. Stir in the lime juice, check the seasoning and serve, topped with roughly-chopped coriander leaves.

I was hoping for something I could just throw in the slow cooker with bits I have in the house. Gave birth 2 weeks ago still having a rough time

Now that I can do! I only have ham stock cubes but hey ho! Bacon makes everything better 🙈

they will do i have used chicken when i have had no veggie ones. Its such a good soup sometimes i do the veg really chunky it goes like a casserole its so tasty its my husbands favorite dinner I cook.

Yeah I don't think I'm gonna blend it down to much. I think my recepie is from cooking tech in school 😂🙈

Put it all in the slow cooker, DH is arguing that I must add curry sauce that's what makes it orange/yellow 😂🙈. Hopefully it'll be all good for tomorrow x

I use bacon or leftover gammon and use veg stock cubes instead.

Amee1992x - I really love your lentil soup recipe and have been making it for years now. My daughter is now making it for her family too. Sometimes I add a few rashers of smoked bacon but mostly stick to your original recipe. Just wanted you to know it is a much loved and economical to make soup. Thank you.
