Have prepped tomorrow's dinner for tomorrow for DH as I'll be at work and he has a 15 min turn around between getting home and needing to feed kids. I've done potato wedges to go with it and have par boiled the potatoes for way too long (was also going to par roast so that he just had to finish off cooking). I forgot I put them on and they're now very well cooked potato wedges with skins on! Don't think my plan will now work. Any ideas? I really don't want to chuck it. It's to go with bean burgers.
