Dinner prep - help me save this meal!

I thought I'd be mega organised and prep dinner before school pick up. But then realised chicken can't be part cooked then left... so I've now done all the prep and the browned chicken is in the oven as a casserole on 165 degrees. But it's 2.30pm!

How long can I leave it in there? What if it's ready way before dinner? Will it be edible?!

To top it off, I remembered halfway through that I'm out tonight so won't even be eating It! Confused

It's fine! Take it out when cooked and refrigerate till you need it or freeze if you don't need it for days.

I'd just finish making it now, cover in foil, then reheat later.

The rest of the family need to eat it at around 5 so how long do you think it'll take to cook at 165? It's thighs. Recipe says 35mins at 180

Turn it up to 180 for 15 mins. Just check a thigh! Tear it with a fork and see if it's done.

I would, but once it's cooked, turn the oven right down and keep checking it so it doesn't burn.

I would just take it out rather than leave it cooking! I happily have a cooked chicken casserole sit for an hour on the counter.

Cover it in foil in a cassarole dish with a bit of oil/garlic/lemons/whatever at the bottom. Put it on at about 100 and leave it. It will be very soft, not your typical roast but many people like it that way.

It was delicious and the chorizo was melt in the mouth having been slow cooked :)
