Dairy Free Family meal inspiration

I'm getting sick of always cooking the same things and needs some new ideas to add to our repertoire. DP is lactose intolerant and loves meat, DS is 5 and fussy but loves things like chorizo so not that fussy if you know what I mean. DD and I will eat pretty much anything. Any suggestions would be great. Thanks

Risotto? Meat paella? Chicken curry with curry paste and coconut milk... Soup? Most things can be adapted

Stuffed red peppers with roast vegetable cous cous (you can buy ready to use packets of it, mix it up as the packet says and pour into red peppers that have been boiled for 5 mins and then put into the oven for half an hour - can add cheese if anyone can eat it).

Chicken and chorizo skewers
Just roll pastry is df can be used to make tarts (roasted veg and chorizo may go down well)
Falafel
Baked salmon parcels
Chilli and rice

Fajitas make guacamole instead of using sour cream and have with sweet potato or make your own wraps.
Tacos do the same.
Anything with a white sauce use vitalite or similar dairy free spread and a non dairy milk almond, soya etc.
Fish pie, chicken pie lasagne with dairy free cheese on top. Tesco and Sainsbury's have a really good range now.
Curry but make a tomato based sauce think southern Indian or Thai with coconut milk.
Egg fried rice with what ever you have left in the fridge
Spanish style stews with fish or chicken dh does a lovely one with salmon and chorizo.
Use up chorizo in a hash with poached egg on top or roast with chicken, butternut squash and new potatoes.

Make your own pesto with fresh herbs and a bit of oil and use with fish or on pasta.

I second vitalite, we use it for dairy free cakes and sauces, like white sauce ( use oat/almond milk) and its fab!

Everyonetalk how do you find the toad in holes work with the almond milk, the oat milk ones I tried making were a bit too stoggy

vitalite makes lighter fluffier cakes imo and you don't have to faff with the mixing with sugar until goes pale nonsense so quicker.

Ds is very sensitive and I make from scratch
tomato sauce with meatballs for spagetti
lasagna
cottage pie
chicken pie
steak and kidney pie
chicken and stuffing - slow cooker meal
chicken and noodles
risotto -stock, no cream and we use pearl barley rather than rice
pizza - ds just has no cheese oh his but the base is a milk free bread dough
pancakes/waffles usually to encourage more calcium consumption
burgers

Tbh a lot of recipes can be made milk free, I have done potato bakes with oat cream instead of cream. There are some that don't convert, and others convert but you have to think outside the box but there are loads of options.

But you have just reminded me I need to restock the freezer with grab and go options for some of these. Blush Also not made bread and butter pudding in a while...

I'm dairy free and make nearly everything in standard cookbooks (e.g. Jamie Oliver, hairy dieters etc) just by either missing out the dairy, or substituting. The only dairy ingredient that stops me trying a recipe now with the alternatives available from Tesco is cottage cheese- I've heard you can use tofu but never actually tried it
